It’s been a few days worth of sweets around my house. I guess we can all blame that on being cooped up with a long weekend of cooler weather here in Texas. Then again, I think the most of the country is in the same situation. And just like the other day? Cold days mean it’s time to get your bake on!
My daughter is a chocolate fiend. A real chocoholic. And brownies? They’re one of her favorites! I mean… who doesn’t like brownies? Especially when they’re still warm and fresh out of the oven? Brownies are not without their faults though. They are usually loaded with fat and sugar. No thank you.
Fat is fat. Right? Wrong! There IS such a thing as healthy fat. And avocados are a HEALTHY fat. They’re also subtle in flavor unless you ‘beef them up’ with other powerhouses. Usually avocado is seen used in savory dishes. But today, we’re using it as a healthy fat in these sweet and decadent vegan brownies. That’s right… VEGAN. No animals were harmed in the making of these brownies.
No eggs. Less sugar. Good fats. These brownies sound like the stuff of dreams. And let me just tell you… they taste like the stuff of dreams too! The avocado in here leaves these brownies perfectly moist and just the way a brownie should be.
They feel indulgent, but they really aren’t! For a HUGE brownie… you come in just at 300 calories. And like I said… that’s a big piece of brownie. Go big, or go home! Do what you will with these brownies. They taste like, look like, and are just like any other brownies. Just a little better-for-you with those healthy fats in there.

• 1/4 C. Mashed/Puree Avocado
• 1/4 C. Avocado Oil
• 1 C. Whole Wheat White Flour
• 3/4 C. Water
• 1/2 C. Unsweetened Cocoa Powder
• 1/2 C. Sugar
• 1/4 C. Stevia
• 1 Tsp. Baking Soda
• 1/2 Tsp. Salt
• 1 1/2 C. Vegan Chocolate Chips Directions:
Preheat the oven to 350 degrees F. and lightly coat the inside of an 8” baking dish with non-stick cooking spray; set aside.
Whisk the 1/4 C. avocado and 1/4 C. oil together in a large bowl until smooth.
Add in the 1 C. flour. 3/4 C. water, 1/2 C. cocoa powder, 1/2 C. sugar, 1/4 C. stevia, 1 Tsp. baking soda, and 1/2 Tsp. salt.
Fold in 1 C. of the chocolate chips.
Transfer the mixture to the prepared baking dish and top with the remaining 1/2 C. chocolate chips.
Place in the oven to bake for about 25 minutes or until an inserted toothpick comes out mostly clean.
Once done, remove from the oven and allow to cool for at least 20 minutes before cutting and enjoying!
Cover and store any leftovers for up to 3 days.
