Soup, soup, soup! It’s all about the soup right now.
Winter is upon us, and while our winter here in Texas is mild for the most part so far… it’s still a little chili outside. And nothing warms the body, mind, and soul quite as well as a hearty bowl of homemade soup!
Since I’ve had tortellini on the mind lately, I thought I’d try to make an Italian inspired tortellini soup today. It starts off with some turkey Italian sausage and a broth tomato base that we add more veggies too. Like onion, garlic, and spinach too!
What makes this soup even more special is that it’s made all in ONE POT. That means you only have ONE dirty dish to fuss with at the end of cooking this soup. I love one pot wonders for that reason alone. But, being as this soup is also delicious and super easy to make… it’s a win-win!
This does turn out to be a BIG pot of soup too. And it’s hearty. Which means it will fill you up on a cold evening and satisfy you for the duration. The fire roasted tomatoes really make a difference too. BUT. If you’re wanting to save on salt - feel free to use a ‘no salt added’ does tomato instead!
I didn’t find the need to serve this soup with any sides since it’s pretty much a meal in a bowl. But, it would be good if served with a small Italian side salad or even with a piece of rustic crunchy Italian bread to soak up the broth at the bottom of the bowl.

• 1 Lb. Sweet Italian Turkey Sausage
• 1 Tbsp. Extra Virgin Olive Oil
• 5 Garlic Cloves, Minced
• 1 C. Chopped White Onion
• 7 C. Reduced Sodium Chicken Broth
• 28 Oz. Diced Roasted Tomatoes
• 1 1/2 Tbsp. Dried Basil
• 16 Oz. Tortellini
• 2 C. Fresh Baby Spinach
• Salt & Pepper to Taste
• Optional Garnish: Grated Parmesean Cheese
Directions:
Heat a large stock pot over a medium-high heat and add in the 1 Lb. turkey sausage (removed from the casing) to brown.
Once done, add in the 1 Tbsp. oil, 5 garlic cloves, and 1 C. chopped onion; continue to cook until the onions are tender.
Add in the 7 C. broth, 28 Oz. diced tomatoes, and 1 1/2 Tbsp. basil.
Bring it all to a boil, stirring on occasion.
Add in the 16 Oz. tortellini and cook for about 5 minutes before tossing in the 2 C. baby spinach.
Continue to cook for another minute or two or until the spinach has wilted.
Season with salt and pepper to taste and divide evenly among bowls.
Serve right away and enjoy with some grated parmesan if desired!
