Peanut Butter & Soy Silken Tofu

November 14, 2025 Amanda Plott

Alright, food adventurers, gather ’round because I’m about to drop a culinary love story that’s equal parts weird and wonderful. Peanut butter and soy silken tofu might sound like odd bedfellows, but trust me—this creamy, dreamy duo is a match made in health-conscious heaven.

Why Peanut Butter & Silken Tofu?

Silken tofu is the underrated MVP of the plant-based world—super smooth, ultra-soft, and bland enough that it happily takes on any flavor you throw its way. Peanut butter? Oh, that familiar nutty goodness that makes everything instantly better. Mix these two, and you get a luscious, protein-packed powerhouse perfect for guilt-free indulgence.

Avocado Tofu Salad is a healthy and refreshing dish that combines the creaminess of avocado with the protein-packed goodness of tofu. This vibrant salad is a perfect option for those looking for a light yet satisfying meal. This delightful dish is here to awaken your taste buds with a homemade garlicky soy sauce drizzle!

The star ingredients of this salad, avocado and tofu, bring a myriad of benefits to the table. Avocado's natural creaminess infuses this dish with a buttery richness that adds depth and indulgence. Tofu & Green Onion Wontons + Chili Broth

June 24, 2022 Amanda Plott

Ever made homemade wontons before? You totally should! They’re a little time consuming, but they are super easy to make and delicious too. These Tofu & Green Onion Wontons are meatless and depending on the base of stock you choose for the Chili Broth, they might be completely vegetarian too! The chili broth here doesn’t mess around either. It has a real kick to it. So if you aren’t big on spicy things, you may want to use a plain broth or lessen the amount of spice in here.

The broth here isn’t meant to be a soup, but more of an additional coating of flavor for the wontons to get to roll around in. Trust me, you need the broth here as it really adds a whole lot to the dish! It’s spicy, tangy, and perfect to pair with the neutral wontons themselves…

Tofu Pad Thai

March 11, 2021 Amanda Plott

Pad Thai tends to be one of my favorite go-to asian themed dishes. I think it’s probably that way for a lot of people since it’s common, simple, delicious, and also tends to be one of the better-for-you options on a menu. I always like to take mine a step further when I can to get it meatless too.

Today I decided to make a take-out fake-out version of Tofu Pad Thai! It’s super quick and easy to make. Everything is put into one skillet for a quick toss and cook at the end. You could probably even get away with making most of the individual pieces ahead of time to have prepped and ready to heat up once ready for it at dinner time…

Baked Buffalo Tofu Strips

October 13, 2020 Amanda Plott

Who needs chicken? These Baked Buffalo Tofu Strips are a great vegetarian alternative to the long time favorite of buffalo chicken. They’re breaded in panko and baked to perfection. That’s right, no frying needed! It’s truly one of my most favorite ways to eat tofu.

The panko seasoning is the star of the show. Tofu doesn’t have any real flavor so you have to put it with a lot of boldness to get anything out of it. That’s why I seasoned the hell out of the breading mixture. But, feel free to add more to it and adjust accordingly to your tastes. Just keep in mind that this is where the MOST of your flavor is going to come from. It should taste very spicy and very salty!…

Veggie & Hummus Pinwheels

May 31, 2016 Amanda Plott

Last week I made my own homemade 5 Ingredient Roasted Red Pepper Hummus, and I made a pretty tasty wrap using it. Since the wrap got a really good response over on Facebook, I decided that I would go ahead and post my actual recipe for it. The only change that I've made is making the wrap into pinwheels so that it could be served as either an appetizer or a fun little 'snackable' lunch option. Plus, let's face it... they are so bright and colorful this way!

These little wheels of awesome are packed with plenty of fresh vegetables and lots of flavor. The secret is in the hummus spread, and of course you can't go wrong with adding feta cheese to anything in my opinion...
