Last week I made my own homemade 5 Ingredient Roasted Red Pepper Hummus, and I made a pretty tasty wrap using it. Since the wrap got a really good response over on Facebook, I decided that I would go ahead and post my actual recipe for it. The only change that I've made is making the wrap into pinwheels so that it could be served as either an appetizer or a fun little 'snackable' lunch option. Plus, let's face it... they are so bright and colorful this way!
These little wheels of awesome are packed with plenty of fresh vegetables and lots of flavor. The secret is in the hummus spread, and of course you can't go wrong with adding feta cheese to anything in my opinion.
While I used my own homemade hummus for these, you could also use a store bought hummus as well. I also happened to make my own roasted bell pepper, just because they are so easy and so much cheaper to make yourself! But again, you could absolutely use something store bought here too.
I kept these lightened up by using a tofu cream cheese (which has just about the same calories as a Neufchatel cream cheese.) I also there almost every vegetable that I could into these to give a full and filling bite.
I have found that these pinwheels make for a great lunch and an amazing appetizer too. If you're going to serve them as an appetizer, I would definitely suggest using toothpicks for easier hand-free handling.
One of my favorite things about these is that they can be served either as a wrap, or as a pinwheel and can also be made ahead of time for an easy grab-n-go lunch or saving time on party preparations.

Ingredients:
1/4 C. Tofu 'Cream Cheese' (Neufchatel Cream Cheese is another option!)
1/2 Tsp. Salt-Free Lemon Pepper Seasoning
1/2 C. Roasted Red Pepper Hummus
4 Large Spinach & Garden Herb Tortillas
1 C. Shredded Carrots
1/2 C. Sandwich Sprouts (Broccoli, Alfalfa, Etc.)
1/2 C. Chopped Roasted Red Pepper
1/2 C. Reduced Fat Feta
4 Butter Lettuce Leaves
Directions:
In a medium sized bowl, combine the 1/4 C. Tofu 'Cream Cheese', 1/2 Tsp. Lemon Pepper Seasoning, and 1/2 C. Roasted Red Pepper Hummus.
Lay out the tortillas and divide the cream cheese mixture evenly among them; spread it out over the tortillas.
Top each tortilla with 1/4 C. Shredded Carrots, 2 Tbsp. Sprouts, 2 Tbsp. Red Pepper, 2 Tbsp. Feta, and 1 Lettuce Leaf.
Roll it all up rather tightly, from one end to the the other.
Cut each roll into about 7-8 pinwheels.
You can use toothpicks to hold them together if need be.
Enjoy right away!
These can also be stored as wraps in an airtight container or baggy for 2-3 days, making them a perfect grab-n-go lunch!
