Caprese Pasta Salad
As it’s getting hotter and hotter outside I’m craving the cold stuff. The lighter stuff. The stuff I don’t have to turn my oven on to enjoy. This Caprese Pasta Salad is just that. Get it started in the morning when it’s cool out and then finish it off in the afternoon or evening as lunch, dinner, or a side for one of the two. The pasta dish itself is based off one of my all time favorites - caprese!

For layer three you have zucchini (or cucumber), layer four is fresh diced tomato, with layer five comes some of my most favorite olives - kalamata. Towards the end is layer six with crumbled feta cheese, and finally layer seven is your sprinkling of green onions…

With that being said, I got wise halfway through the week and started to meal-prep most of the meals.
This Club Wrap is one of my current favorite lunches. It’s a quick bite that’s light, full of flavor, and perfect for grab-in-go situations. In all honesty, I based this wrap off of one that my mom and I shared a few weeks ago after a long and exhausting trip to the grocery store…

We're a few days into our week long theme of the ocean over here and we're really having a fun time of it! Since we're not big on seafood in this house, coming up with clever non-fishy ocean themed recipes has proved to be... well... a little challenging. It's also been so very worth it too though!
The inspiration behind this pasta salad actually came from one of my daughter's cook books. I had to do a lot of tweaking to the original though to suit our tastes. So much so, that by the time I was done with it... it's basically a whole new recipe…
