Lightened Up Lazy Enchiladas

April 28, 2022 Amanda Plott

It’s definitely that time of year where Summer is lingering on the horizon and we’ve all got to dig deep to try and push forward through the rest of the school year and into Summer break. Most years, I’m not quite ready for the hot 100 degree days and three months of blistering sunshine, but this year I am all in. I. Can’t. Wait. That being said, I still have things to do!

That’s where quick weeknight meals and easy dinner options come into play, like these Lightened Up Lazy Enchiladas! They are so easy to make and delish too. So what’s a lazy enchilada anyway? Well, there’s no tortillas involved. It’s basically a casserole that you make with tortilla chips, sauce, meat, and veggies. No rolling involved….

Taco Pie (Crustless Quiche)

May 22, 2020 Amanda Plott

I’m not unfamiliar with a crustless quiche. Quiche is one of my most favorite breakfast, brunch, lunch, and dinner meals! I guess that’s one reason why I love quiche; It’s a meal appropriate at any time of day. Another thing I like about it? It’s a great way to use up leftovers!

This Taco Pie is made with just 7 ingredients and a few minutes of hands on time. The oven does most of the work for you. It’s keto friendly, low carb, and gluten free too. Plus, it’s another excuse to enjoy a taco. How can you say no to that?…

Healthified Restaurant Style Salsa

April 28, 2020 Amanda Plott
healthified-salsa5.jpg

This is an old one, but a good one. This Blender Salsa is tried and true and was one of the very first recipes that I ever posted here way back in 2013! It’s been a good long time since I made this salsa, and being as I managed to get my hands on a bunch of canned tomatoes… and a lot of us are surviving on pantry staples, I thought there was no better time than now to make this Healthified Restaurant Style Salsa again.

Originally I came up with this Healthified Restaurant Style Salsa for a family member who wanted one similar to what you’ll find at a chain restaurant that’s known for it’s peppery name…

Air Fryer Breakfast Taquito

January 8, 2020 Amanda Plott
air-fryer-taquito10.jpg

Sometimes you just need a nice warm breakfast to get you going in the morning, and recently since I’ve fallen in love with lavash bread, I decided to try my hand at using the lavash to make a breakfast taquito! Being as I tend to be a lot more of a savory breakfast person, rather than a sweet breakfast person, breakfast taquitos are pretty much my jam.

Normally breakfast taquitos are made with flour tortillas, but the lavash bread gives me a lot more bang for my buck, if you know what I mean. (It’s fewer calories and whole wheat!) Even though it’s still pretty chilly outside in the mornings, I figured the air fryer would be a quicker and easier way to get my breakfast taquito hot all the way through…
