It’s the first day of March and St. Patrick’s Day is coming up quickly! These Irish Pub Skewers are super simple and easy to make. In this house, we love finger foods, and these small bites with an Irish nod to them are perfect for entertaining around St. Patrick’s Day.

Fried pickles… need I say more? One of my favorite things to enjoy at the local theater is their fried pickles. Nice sized spears that are perfectly crisp on the outside and hot as hell and juice on the inside. Perfect for dipping into some ranch on the side while watching a movie.

I’ve still been giving a lot of thought to lunches lately. Mostly because it’s a meal that’s pretty easy for me to skip out on. Which is never a good thing. Plus, my mom has needed some fun lunch ideas, so it just seemed to work out perfectly. Originally, I had thoughts of doing an ‘all American’ style lunch box but pimento cheese was being craved so… here we are.

I’m calling this an old-fashioned southern lunch box because when I was little, I remember my grandmother making me pimento cheese sandwiches on wonder bread. Served with a pickle and maybe some plain-jane potato chips. So this is a nod to that!…

I tell you, summer is not going to go down without a fight this year. It's been well over 100 degrees here in Austin, Texas and so far we're still hovering in the upper 90's and often with a heat index of 106+ - yikes! It's hot, but nothing is quite as hot as this Quarter Pounder Burger Salad.

We're almost to the middle of the week, and if you're anything like me the craziness is only just starting to settle in!
