I tell you, summer is not going to go down without a fight this year. It's been well over 100 degrees here in Austin, Texas and so far we're still hovering in the upper 90's and often with a heat index of 106+ - yikes! It's hot, but nothing is quite as hot as this Quarter Pounder Burger Salad.
Let's face it, we all know what a 'quarter pounder' is. We don't even need to add the 'burger' part to that phrase and we'll all understand what's being spoken about. A quarter pound patty that's got lettuce, tomato, pickles, maybe some onion, and of course special sauce!
While it's unimaginably hot outside and football season is officially kicked off, I decided the best thing to do was to cool off with a nice hearty salad ahead of any big game tailgating (or homegating.)
I started these Quarter Pounder Burger Salads off with a fun iceberg lettuce bowl that's fluffed up with more lettuce. Then the patty comes in to play. I picked up some of the NEW MorningStar Farms® Quarter Pound Veggie Burgers available at Walmart. They come in two flavors: Meat Lovers Burgers and Veggie Lovers Burgers. I decided to roll with the Veggie Lovers Burger today. It's a better for you burger packed with 12 different veggies, 2 seeds & 2 grains, plus 10 grams of Plant Based Protein.
Over the delicious, perfectly crafted burger patties, I added all the traditional 'quarter pounder' toppings. Tomatoes, pickles, cheddar, a homemade special sauce, and even a few sesame seeds for good measure.

'Special Sauce' Dressing:
• 1/4 C. Light Mayonnaise
• 2 Tbsp. Plain Fat Free Greek Yogurt
• 1 Tbsp. Ketchup
• 1/2 Tbsp. Sweet Relish
• 1/4 Tsp. White Vinegar
• Salt & Pepper to Taste Burger:
• 4 MorningStar Farms® Veggie Lovers Burgers
• 1 Head Lettuce
• 1 Medium Tomato, Diced
• 1/2 C. Shredded Reduced Fat Cheddar Cheese
• 1 Large Pickle, Diced or Chopped
Directions:
In a medium bowl, mix together all of the ingredients for the 'Special Sauce' dressing, cover and place in the fridge to chill. While the dressing is getting nice and cold, heat up the grill! Cook the burgers according to package directions. As the burgers are cooking, feel free to prepare the rest of your salad. To make a lettuce bowl, cut a large head of lettuce in half and scoop enough out of the middle to to create a 'bowl'. Chop up the lettuce that had been scooped out and divide evenly among the lettuce bowls. NOTE: I sat my lettuce bowls into actual bowls to help them hold their shape! Once the burgers are done, remove them from the grill and allow to cool slightly. Top each salad with some of the diced tomato, 2 Tbsp. cheese, and pickle. Cut the burger patties if desired and add those to the salad as well.
Drizzle each with about 2 Tbsp. of the prepared 'Special Sauce' dressing and enjoy right away!
