I’ve still been giving a lot of thought to lunches lately. Mostly because it’s a meal that’s pretty easy for me to skip out on. Which is never a good thing. Plus, my mom has needed some fun lunch ideas, so it just seemed to work out perfectly. Originally, I had thoughts of doing an ‘all American’ style lunch box but pimento cheese was being craved so… here we are.
I’m calling this an old-fashioned southern lunch box because when I was little, I remember my grandmother making me pimento cheese sandwiches on wonder bread. Served with a pickle and maybe some plain-jane potato chips. So this is a nod to that!
This lunch box starts out with pimento cheese. I got a local brand, but making your own is an even better option! I’ve made my fair share of the stuff over the years. Instead of bread, I went with some gluten-free crackers with some ‘everything’ seasoning on them (again they are a locally made tidbit.) Yep, even the pickles here are local made.
After all that, it’s just other scoopable snack veggies like celery, carrots and tomatoes - oh my! It’s good stuff here and I love that these boxes can be made ahead of time and available on hand through the week. With just a few minutes of prep and nothing to actually cook.
That’s all there is to it folks. You likely won’t find these same crackers, but any cracker will do. From gluten-free to bagel crisps; it’s whatever your little heart desires.

• 8 Oz. Pimento Cheese
• 32 Crackers
• 12 Pickle Chips
• 16 Cherry Tomatoes
• 4 Stalks of Celery
• 16 Baby Carrots Directions:
Set out four sectioned lunch boxes.
Divide pimento cheese evenly between boxes along with, 8 crackers, 3 slices of pickle, 4 tomatoes, 1 stalk of celery, and 4 baby carrots per box.
Cover each box and store in the fridge until ready to enjoy!
