Peanut Butter & Jelly Cookie Cups

January 10, 2023 Amanda Plott

These Peanut Butter & Jelly Cookie Cups are my JAM. Hah. Get it? I’m feeling extra punny today apparently. So these cookie cups are similar to one I did back a few months ago, but instead of hazelnut spread I decided to go with PB&J! Because who doesn’t like a good peanut butter and jelly anything? Well, other than the poor folks who are allergic. Which if you are? This obviously isn’t the recipe for you.

Now. These cookie cups start off with a refrigerated peanut butter cookie dough. It’s proportioned and ready to go so it makes life super simple. Just pop the dough into the mini cupcake pans and bake away…

Breakfast Biscuit Cups

November 21, 2022 Amanda Plott

It’s all about ease this week as we roll into the first of the major holidays for the season. So, in the midst of my dishwashing being repaired in my very tiny kitchen, I managed to piece together these Breakfast Biscuit Cups because… tummies still need to be fed despite holidays and last minute repair work. Look guys, I’m just really hoping that I have a working dishwasher come Thanksgiving, or we all might just be using paper plates again this year. Yes, again.

So! That tells you just how simple and easy these Breakfast Biscuit Cups are to make. These have all the major breakfast components - biscuit, bacon, egg, and cheese. That’s really all you need to get through the start of your day anyway…

2 Ingredient Peanut Butter & Nutella Cookie Cups

November 6, 2022 Amanda Plott

It just doesn’t get any more simple than this when it comes to cookies, folks. These 2 Ingredient Peanut Butter & Nutella Cookie Cups are the easiest cookies I’ve ever put together. And they’re super tasty too! When starting these cookie cups off, I picked up some refrigerated peanut butter cookie dough that was pre-made so that there was less fuss on my end.

After that, they were baked, shaped into cookie cups, and then filled with hazelnut spread. You can eat these warm, or directly out of the fridge for a nice cool sweet bite since they can be stored in the fridge for a few days after being made. They’re a great grab-and-go snack to have on hand…

Lemon Bar Cookie Cups

April 1, 2022 Amanda Plott

It’s Spring and that means its time for lemon bars and all things bright and light! These sweet little Lemon Bar Cookie Cups are the perfect individual lemon treat. They start out with a homemade cookie cup from scratch that’s somewhere between a sugar cookie and a short bread cookie. Then the sweet cups are filled with a homemade lemon curd that is super easy to make - and nearly fool proof too!

Now, I’ve made thumbprint lemon cookies before, but these cups take it a step further and give you a lot more cookie and lemon goodness, but the thumbprint version have their place too. Honestly these Lemon Bar Cookie Cups remind me of lemon pies too…

Skinny Biscuits & Gravy Cups

July 16, 2021 Amanda Plott

Biscuits and gravy cups? That’s right! Biscuit dough cups that are filled with an easy to make homemade sausage gravy that makes it all perfectly grab-and-go friendly while also being great for the kiddos! While these Skinny Biscuits & Gravy Cups are cute and even impressive, they are actually really simple and easy to make with just a handful of ingredients.

Since there isn’t a whole lot you can do to lighten up this biscuit part (outside of making your own biscuit dough), I did just about everything I could to make the gravy better-for-you. I started the gravy off with a lean turkey breakfast sausage and then swapped in almond milk for regular milk. I also used a reduced fat cheddar in place of regular…

May 13, 2019 Amanda Plott
peanut-butter-cups2.jpg

Who knew that making your own homemade peanut butter cups could be so easy?!

Well, I did! I’ve made a few different versions in the past, but none of them were the classic peanut butter and chocolate. Being as I’m still sticking with that whole ‘keep it simple stupid’ mantra right now, I thought it was high time to make my own traditional peanut butter cups.

So what makes these special? Well, they’re made with just 3 ingredients. Yep! JUST three ingredients. All of which I have on hand at all times in my pantry, and you probably do too…
