Lightened Up Coffee Cake

So once again I have a confession to make. This past Christmas my mom came over with this coffee cake that she had received as a gift from her boss at work. He got everyone in her office, plus all of their clients one of these coffee cakes. Now... generally I'm not the hugest fan of coffee cake. it's too crumbly and dry for me. However, this coffee cake... holy moly! It was decadent, buttery, and just the perfect amount of sweet. Yum!

I had that cafe from breakfast and dessert for a couple of days. You know, I'm all about plotting yourself those occasional treats. The coffee cake was made by a local Texas bakery which I intend to visit one day since it's only about an hour away. Though I might have to be dragged out by my hair kicking and screaming along the way. For the past month or two now I've taken on the challenge of starting to exercise. Healthy eating has been a part of my life for a good long while now, but I've never really been one to actually 'exercise'. I think the last time that I actually didn't anything with fitness was well before I had my little girl. That was over 5 years ago!

I've been 'hitting the gym' 3-4 days a week, doing everything from the treadmill, to tabata, cardio, pilates, barre, yoga and back again. I thought that starting in with a fitness routine would be hard, but I guess I was just mentally ready for it since I became addicted pretty much instantly. I haven't given myself a chance to quit or find an excuse not to go.

In fact, I've found myself considering it as 'part of my job duties'. It's a must do to complete my weekly tasks sort of thing. I feel so much better. Even after the first initial week of exercise I felt lighter, healthy, and more grounded...

I'm the mother of a rather active almost five year old girl. (I mean... what little one isn't active, am I right?) Around here, mornings are always full of chaos and about 75% of the crazythat will go along with the day. It seems like everything is a struggle. Getting dressed, brushing teeth, brushing hair, everything. It's just an all out stressful situation! 

Recently, I started in with a 'chore chart' that seems to make the mornings a bit easier. For each 'chore' she does on her own to get ready in the morning, she gets a star sticker. At the end of the week if she has accumulated enough stars, she gets a special treat or prize. 

Another thing that helps with my morning routine is always starting my day off with a nice big cup of coffee. It's that morning pick-me-up that I absolutely need to get through it all. Yeah, you know what I'm talking about. Once I get my little one dressed and settled in (whether at home or pre-school), I like to indulge in a second cup of coffee for a bit of much needed "me time". 

Today I'm using McCafé coffee in yet another way to help me get through my day while indulging in a better-for-you treat at the same time! After all, what goes better with coffee than donuts anyway? Now you can enjoy both together in one glorious bite...

So this past week was pretty amazing and spectacular. I was give the chance to review a new Keurig® 2.0. Naturally, I was more than excited for this opportunity, especially being as I'm about to have a houseful of guests next week for the holidays.
