Who said waffles have to be sweet all the time? Not me! Ever since I got my new waffle maker a couple of weeks ago, I’ve been a waffle making fiend. Waffles today were savory, but more on the end of breakfast or brunch than my cornbread waffles from last week.
These Savory Spinach & Cheese Waffles are exactly that. Standard protein waffle mix with spinach and cheese added in. They’re super tasty and go great with an instant pot poached egg and a drizzle of sriracha on top.
I used a mozzarella cheese here and an unsweetened almond milk to keep the calories low and the flavor high. At the end of the day, these Savory Spinach & Cheese Waffles beat the pants off of any one of those fad worthy avocado toast things and are just about as easy to make.
Don’t worry, eventually I will make a sweet waffle again!
Savory Spinach & Cheese Waffles
Ingredients
- 1 C. Protein Pancake/Waffle Mix
- 3/4 C. Chopped Spinach
- 2/3 C. Unsweetened Almond Milk
- 1/3 C. Shredded Mozzarella
- 1 Tsp. Minced Garlic
Instructions
- Preheat the waffle maker.
- Mix together the 1 C. protein waffle mix, 3/4 C. spinach, 2/3 C. milk, 1/3 C. cheese, and 1 tsp. garlic together in a medium bowl.
- Place half of the mixture onto the prepared waffle iron and cook accordingly to the waffle maker for about 3 minutes.
- Once done, remove the waffle from the waffle maker, and rinse and repeat for the remaining batter.
- Serve right away with your choice of savory breakfast toppings to enjoy!
