I’ve noticed something over the past few weeks. As we circle in through the Fall season and into Winter, all the bright fun colors in food tends to slip away. Everything takes on warm brown and red hues. And you know what? I’m just about tired of it. So today I decided to add some color back into my kitchen!
These Rainbow Unicorn Marshmallow Cookies are as tasty as they are colorful. And they take no time at all to whip up and bake. Unlike a lot of cookies out there, this dough needs no chill time and comes together all in ONE bowl.
I love how fun, bright, and colorful these cookies are. And with well under 100 calories per cookie? Well, I’ll take it! The bitterness of the chocolate, sweetness of the marshmallows and the touch of salt make for the perfect bite of rainbow goodness.
I found my ‘cereal’ marshmallows as a limited edition at the store, but you can also find them on Amazon. Though if worse comes to worse, pick them straight out of the box! That might take a while though. So, if you can find them to buy easily, that would be best.

• 1/2 C. Room Temperature Butter
• 1/2 C. Natural Sweetener
• 1/4 C. White Sugar
• 1 Whole Large Egg
• 3/4 Tsp. Vanilla Extract
• 1 1/2 C. All-Purpose Flour
• 1 Tsp. Cream of Tartar
• 1 Tsp. Baking Powder
• 1/2 Tsp. Baking Soda
• 1/4 Tsp. Salt
• 1 1/2 C. Cereal Marshmallows
• 1/2 C. Rainbow 'Jimmies' Sprinkles
• 1/2 C. Semi-Sweet Chocolate Chunks
Directions:
Preheat the oven to 350 degrees F. and line a baking sheet with parchment paper or a silicone baking mat set aside.
Cream the 1/2 C. butter, 1/2 C. sweetener, 1/4 C. sugar together in the base of a stand mixer.
Add in the egg, 3/4 Tsp. vanilla and beat until well combined.
Mix in the 1 1/2 C. flour, 1 Tsp. cream of tartar, 1 Tsp. baking powder, and 1/2 Tsp. salt until just combined.
Fold in the 1 1/2 C. marshmallows, 1/2 C. sprinkles, and 1/2 C. chocolate chunks.
Scoop the dough into 2 Tbsp. amounts and roll into a ball, place on the prepared baking sheet about 2” apart. Rinse and repeat for remaining dough.
Place in the oven to bake for 10 minutes.
Once done, remove from the oven and transfer to a wire rack to cool completely.
Enjoy right away or store in a cool dry place for 3-5 days.
