It’s almost the weekend and that means it’s time for some meal prepping! This Overnight Pumpkin Spice Oatmeal is a great way to get that pumpkin spice goodness of Fall in there for breakfast with minimal effort. And I do mean very minimal.
These oats are mixed together with pumpkin purée, spices, milk and some greek yogurt to create the perfect breakfast bite to grab-and-go out the door come the busy week ahead. It’ll fill you up and keep you going all the way through to lunch time!
I kept these oats lightened up by using almond milk and a greek yogurt to boost the flavor AND the protein. There’s a touch of pumpkin in there to really kick off those pumpkin spices. Though you could definitely swirl more pumpkin purée in there if you’re a fan of a bolder pumpkin taste.
After an overnight in the fridge, these oats are done soaking up all the goodness they were mixed with and are ready to enjoy!
I topped mine off with some bonus cinnamon and some sliced banana this morning, but you can try more pumpkin purée, syrup, honey, or anything else that floats your oatmeal boat.

• 1 C. Old-Fashioned 'Rolled' Oats
• 1 C. Unsweetened Almond Milk
• 1 C. Vanilla Greek yogurt
• 1/4 C. Pumpkin Puree
• 1 Tsp. Vanilla Extract
• 1/2 Tsp. Ground Cinnamon
Directions:
Mix all of the ingredients together and divide evenly among air-tight jars or containers.
Secure lids and place in the fridge overnight.
Once done, remove from the fridge and enjoy!
Keep stored in the fridge for 3-5 days.
