We all reserve the right to be a little lazy every so often, and with a quick trip planned for the weekend (followed by two weeks of self-quarantine) I’m feeling the laze take over. Either way, my daughter asked for some more cookies after all the GIANT Valentine Cookies from last week disappeared. Gee… I wonder how that happened…
Being as I was out of special Valentine sprinkles, and again… I’m being lazy, I thought I’d try my hand at a ‘lazy cookie bar’ recipe that was passed off to me. I did make one small change to lower the calorie count just slightly, but other than that it’s pretty much the same-same.
The only real thing you can do to make these cookie bars a little more health conscious, is to swap some of the butter out. Which I totally did. My favorite swap for butter in baking is greek yogurt, so that’s exactly what I went with today.
Even though I used festive Valentine inspired cake mix and candies, you could really theme these for any holiday or just because!

• 1 (18.5 Oz. Box Cake Mix
• 2 Whole Large Eggs
• 1/4 C. Butter
• 1/4 C. Plain Fat Free Greek Yogurt
• 2 C. Candy Coated Chocolates
Directions:
Preheat the oven to 350 degrees F. and line a 13x9” baking dish with foil and coat it with non-stick baking spray; set aside.
In a large bowl, combine the 1 box cake mix, 2 eggs, 1/4 C. butter, and 1/4 C. greek yogurt together until smooth
Stir in the candy coated chocolates.
Transfer the dough to the prepared baking dish and smooth it out slightly.
Place in the oven to bake for 15-20 minutes or until it’s lightly browned at the edges.
Once done, remove from the oven and press a few more chocolate candies into the top if desired. Allow to cool completely before cutting into squares.
Enjoy right away or store in a cool dry place for up to a week!
