Look, sometimes a girl just needs to eat some BBQ. I’ll be honest, I’ve never actually cooked ribs on my own. I’ve eaten plenty of them. But cooking them? It just sounds scary! Even as a native Texan, the thought of cooking GOOD ribs seems daunting. So when I cam across the idea of cooking them in the pressure cooker? I was sold.
These Instant Pot Ribs are pretty damn good for what they are. No smoking. No marinating. Just rub them down and pop them in the pressure cooker before finishing them off with a quick roast under the broiler. Yep. It’s just that easy.
I did both baby back ribs and boneless beef short ribs in the same pot at the same time and as you can see? The baby back ribs were falling off the bone, juicy, and tender. I mean… look at how clean that bone is there? That’s just beautiful.
Serve these ribs up however you want and feel free to use your favorite BBQ sauce. I went with a Texas style sauce because I’m a Texas style girl, but you go with whatever your heart desires or even make your own!

Dry Rub:
• 2 Tbsp. Paprika
• 1 Tbsp. Brown Sugar/Sweetener Blend
• 2 Tsp. Garilc Powder
• 2 Tsp. Onion Powder
• 2 Tsp. Lemon Pepper
• 2 Tsp. Oregano
• 1 Tsp. Black Pepper
• 1 Tsp. Smoked Paprika
Ribs:
• 4 Lbs. Ribs (Baby Back or Boneless Beef Short Ribs)
• 1 C. Unsalted Beef Broth
• 1/2 Tsp. Liquid Smoke
• 1 Onion, Sliced
• 4 Garlic Cloves
• 1 C. BBQ Sauce
Directions:
In a small bowl, mix together the ingredients for the dry rub and set aside.
If using baby back ribs, rinse them and pat dry before removing the thing membrane on the back of the ribs.
Rub the ribs down with the dry rub.
Place the 1 C. broth and 1/2 Tsp. liquid smoke into the base of the instant pot.
Lower the ribs into the instant pot with the trivet and top with the sliced onion and 4 garlic cloves.
Seal the lid and set the steam valve to ‘sealed’.
Cook on manual for 45 minutes then allow the pressure to release naturally or do a quick release.
Line a baking sheet with foil or a silicone baking sheet and set the oven to broil.
Brush the ribs with the BBQ sauce on all sides and place under the broiler for about 3-5 minutes, flip, and cook for another 3-5 minutes on the other side.
Once done, remove from the oven and enjoy right away!
