And just like that, this is the last post of not only the this year, but of this decade!
I decided that with this being the last one of the decade, I thought I would take it a step further and make this recipe even more special by including my little mini-me in on it. I mean… she has two and a half weeks off from school and I need to entertain her somehow, so I put her to work making cookies and writing about it.
So, we sat down and planned out what exactly we’d make. She happened to a book on ‘kids cookies’ a few months back and so that’s where we started. Within the book there’s a recipe for some chocolate cut-out cookies, and that was our inspiration for today! These Kid-Friendly Chocolate Cut-Out Cookies are easy to make and require just a few ingredients, plus they end up tasting just like the cookie part of those famous sandwich cookies we all know and love. We definitely made a few easy substitutions to make these cookies just a little more healthy.

Hi, this is the Skinny Fork’s daughter, Lily! So, this is basically how my mother and I made Chocolate Cookie Cut-Outs. To make them a tad bit healthier, we used natural sugar, whole wheat white flour instead of regular flour, and we also used dark cocoa powder instead of plain. Those are pretty much all the ingredients we replaced. So, this is pretty much an easy recipe for kids. And another thing we did to make these cookies was chill them for a long time, and if you don’t chill them they would get spread out and not look as good. Next time you and your kids are bored together, try this recipe! Anyways, the Little Fork is out!

• 3/4 C. Softened Unsalted Butter
• 1 C. Natural Sweetener
• 1/4 C. Granulated Sugar
• 3/4 C. Unsweetened 100% Cocoa Powder
• 1 Whole Large Egg
• 1 1/4 Tsp. Baking Powder
• 1/4 Tsp. Salt
• 1 1/2 C. Whole Wheat White Flour
Directions:
In a large bowl, beat together the 3/4 C. butter, 1 C. natural sweetener, and 1/4 C. sugar on a medium speed.
Add in the 3/4 C. cocoa powder, 1 egg, 1 1/4 Tsp. baking powder and 1/4 Tsp. salt and beat again until well combined.
Reduce the speed to low and beat in the 1 1/2 C. flour until blended.
Once done, turn the dough out onto a lightly floured parchment paper or silicone baking mat.
Roll the dough out to be about 1/4 “ thick and cover with another sheet of parchment or another silicone mat.
Place it in the fridge to chill for at least 2 hours.
Once the dough has chilled, preheat the oven to 375 degrees F. and line a baking sheet with parchment paper or a silicone baking sheet.
Remove the cookie dough from the fridge and use a cookie cutter of your choice to cut out your cookies!
We used a very small heart shaped cutter that was about 1 1/2-2” in diameter.
Transfer the cookies to the prepared baking sheet and set them about 1-2” apart.
Place the baking sheet in the oven and bake for 8-10 minutes or until the edges of the cookies are crisping slightly.
Once done, remove from the oven and set aside to cool for about 5 minutes before transferring to a wire rack to continue cooling.
Decorate the cookies as desired (or don’t at all) and enjoy!
