Breakfast casseroles are one of the best ways to feed a group of people (large or small) with little effort. And this Instant Pot Breakfast Casserole is probably one of the most easy and quick ways to get breakfast (or brunch) done in a hurry. Whether its for a special occasion or just a weekend morning, this Instant Pot Breakfast Casserole is here to save the day. and your sanity.
I kept this casserole pretty basic with the usual savory breakfast bits that everyone knows and loves. Bacon. Eggs. Cheese. A plethora of veggies. And YES even hash browns.
You can always sub in your favorite breakfast sausage for the bacon, or even another cheese if cheddar isn’t your jam. And if you wanted to take this to a more southwest meal, you could kick it up a notch with some jalapeño!
All in all, this casserole is one of my new (and most favorite) ways to feed the lot of us without much thought behind it.

• 2 C. Frozen Hashbrowns
• 1/2 Small Red Onion, Diced
• 1 1/2 Bell Peppers, Diced
• 6 Slices of Bacon, Cooked
• 1 C. Shredded Cheddar Cheese
• 10 Eggs
• Salt & Pepper to Taste
Directions:
Coat the inside of a 6x4” or 7x4” spring form or push pan with non-stick cooking spray and wrap some foil around the bottom of it. Place 1 C. water into the base of the instant pot.
Layer the 2 C. hash browns, 1/2 diced red onion, 1 1/2 diced bell peppers, and 6 slices of bacon in the prepared pan.
Top with the 1 C. cheese.
Whisk together the 10 eggs and some salt and pepper to taste.
Pour the eggs over everything and lower the pan into the instant pot with the trivet.
Secure the lid and set the steam valve to ‘sealed’.
Cook on manual high pressure for 25 minutes. Once done, allow the pressure to release naturally.
Once done, remove the lid and the pan from the instant pot.
Remove the casserole from the pan by using the push pan bottom or releasing the spring form.
Divide evenly and enjoy right away!
