This Hummus Toast is a delightful Mediterranean twist on the ongoing trend that is toast. This mouthwatering creation begins with a generous spread of velvety Mediterranean style hummus on a thin slice of crusty scratch made bread. The creamy hummus serves as a delectable base, offering a delicate balance of flavors.
A colorful assortment of cherry tomatoes and pine nuts are set on top, creating a vibrant and fresh medley. A sprinkle of crumbled feta cheese adds a tangy kick, while the bit of extra-virgin olive oil in the hummus brings a touch of richness. This open face hummus Mediterranean toast is a delicious and wholesome way snack on or have as part of a light lunch.
To keep this lightened up, really the only thing I could do was to go with a fat free feta cheese which honestly tastes just the same as full fat feta to me. I also chose to go with a Mediterranean style of hummus rather than any of the flavored alternatives. This one has Mediterranean herbs and a little bit of olive oil drizzled on top of it.
I didn’t serve mine with anything else. I also lightly mashed the tomatoes on top so that some of their juices could sink into the bread. All in all it was a nice little part of lunch that I can’t wait to have again.
Hummus Toast
Ingredients
- 6-8 Cherry Tomatoes, On the Vine
- 1 Slice Scratch Made Bread
- 2 Tbsp. Mediterranean Style Hummus
- 1 Tbsp. Pine Nuts
- 1 Tbsp. Fat Free Feta Cheese Crumbles
Instructions
- Line a baking sheet with foil or a silicone baking mat and set your cherry tomatoes on the vine on the baking sheet. Place it in the oven (un-preheated) and set the temperature to 375 degrees F. Once the oven comes to temperature, set a timer for 10 minutes.
- When the tomatoes are nearly done, toast the slice of bread.
- Spread the 2 Tbsp. Mediterranean Style Hummus over the toast.
- Top with the 1 Tbsp. Pine Nuts and 1 Tbsp. Fat Free Feta Cheese Crumbles.
- When the tomatoes are done, place them over the toast.
- Remove the stem and enjoy!
