This Mediterranean Feta & Lemon Chicken is packed full of flavor and it’s all to do with the lovely marinade that it sits in for just thirty minutes. Only good, clean, and fresh ingredients go into it too. I don’t know about anyone else, but I can’t say no to a good feta cheese dish anyway and this chicken is just about as good as it gets.
Being as the ingredients here are super simple, there isn’t a whole lot to do here to lighten this up other than by using a fat free cheese, which is exactly what i did. I also used boneless skinless chicken breast and it was fantastic.
I’m not generally a big fan of fresh parsley, but I did really love it here with the feta on top and the squeeze of a lemon wedge over the top to really cut through the fresh parsley a bit. For this I used large chicken breasts, but you could also go with cutlets.
I served mine with herbed pearled couscous and some sautéed baby spinach to a full and complete meal that was scarfed up in no time at all!
Mediterranean Feta & Lemon Chicken
Ingredients
- 1 Lemon, Juiced & Zested
- 1/4 C.Extra Virgin Olive Oil
- 3 Garlic Coves, Minced
- 1 Tsp. Dried Oregano
- 1/2 Tsp. Smoked Paprika
- 1/2 Tsp. Salt
- 1 Lb. Chicken Breast
- 1/4 C. Fat Free Feta Cheese Crumbles
- 1/4 C. Chopped Fresh Parsley
- Additional Lemon Wedge
Instructions
- Whisk together the 1 Lemon Juice & Zest, 1/4 C.Extra Virgin Olive Oil, 3 Garlic Coves, 1 Tsp. Dried Oregano, 1/2 Tsp. Smoked Paprika, and 1/2 Tsp. Salt.
- Cut the chicken into thin cutlets and place into a ziplock with the marinade.
- Marinate in the fridge for 30 minutes.
- Preheat the oven to 375 degrees F.
- Heat a skillet over medium-high heat and give it a light spritz of non-stick spray. Add the chicken to the skillet and cook for 3-4 minutes, flip, and cook for another 3-4 minutes.
- Place the chicken onto a baking sheet and top each piece with the 1/4 C. fresh parsley and 1/4 C. feta divided evenly.
- Transfer to the oven to cook for 5-10 minutes or until the chicken is cooked through to temperature and the feta is soft and l a little melty.
- Once done, remove from the oven and serve right away with a lemon edge for garnish!
