With the schedule around my house changing up a bit recently, I've had to make some adjustments to when and how I cook. So, I've been cooking a lot less and mostly just for myself since my little one is still a rather picky eater and lately dinner time is our mommy-daughter time.
That being said, dinner time for me has included quicker, easier dishes that are either meal prepped or a one and done toss together sort of salad. Most recently I've had a stockpile of leftover feta in my fridge that needed to be used up, which for me always means it's time for a Greek/Mediterranean style salad!
This Mediterranean Chickpea Salad is as simple as it comes; just a bunch of veggies and some beans that are tossed together with the simplest sort of 'dressing' there is. What makes it better is that it's a good salad for meal prepping and tastes absolutely amazing.
The idea for this salad sort of came from a similar style salad that I've been getting from a local market for dinner once a week. But, this one is definitely bulked up some with the chickpeas and a whole lot cheaper.
This salad would be great paired with a piece of grilled chicken if you wanted it more as a hearty kind of 'meal', but honestly, it's basically a light meal (especially perfect for lunching) in itself already.
Mediterranean Chickpea Salad

The Skinny:

Ingredients:
1 (14.5 Oz.) Can Chickpeas/Garbanzo Beans
1 C. Chopped Bell Pepper
12 Cherry/Grape Tomatoes, Halved or Quartered
1/4 C. Diced Red Onion
1/4 C. Pitted Kalamata Olives
1/4 C. Feta Cheese Crumbles
1/4 C. Lemon Juice
1 Tbsp. Extra Virgin Olive Oil
Directions:
Toss everything together in a medium bowl and stir to combine.
Enjoy right away or store in an air-tight container in the fridge to chill and keep for 3-5 days.
