Here’s another super easy dinner coming at you. This Mediterranean Gnocchi Sheet Pan Dinner is cooked all on one sheet pan and takes just 25 minutes to cook. Meaning that it'‘s absolutely PERFECT as a quick and delicious weeknight or back-to-school dinner. Plus, it’s vegetarian and gluten-free too! It really and truly doesn’t get any more simple than this.
This sheet pan dinner is loaded up with all sorts of vegetables; mushrooms, tomatoes, peppers, onions, squash, and zucchini. It’s all baked together with some gnocchi after being tossed together with some pesto and vingar. Good stuff!
I found that this sheet pan dinner was just that and it didn’t need anything else to go with it since it basically ends up as a meal in a bowl. The gnocchi and the vegetables are hearty and filling enough all on their own. I served mine with a sprinkle grated parmesan and some fresh parsley on top, but some feta cheese would be good too!
Make your own pesto or get one that’s pre-made. Either way, this sheet pan will turn out perfectly tasty! I have a lot of recipes for homemade pestos that are easy and quick to make. Just like this dinner.
Mediterranean Gnocchi Sheet Pan Dinner
Ingredients
- 1 pint Sliced Mushrooms
- 1 pint Grape Tomatoes
- 17.6 Oz. Gnocchi
- 1 Red Onion, Diced
- 1 Zucchini, Diced
- 1 Yellow Squash, Diced
- 1 Bell Pepper, Diced
- 1 Bulb Garlic
- 2 Tbsp. Pesto
- 2 Tbsp. Balsamic Vinegar
- Optional Topping: Grated Parmesan Cheese
Instructions
- Preheat the oven to 400 degrees F. and line a baking sheet with foil for easy clean up.
- Toss everything together on the sheet pan to coat evenly.
- Place the pan in the oven and bake for 25-30 minutes.
- Once done remove from the oven and top with fresh parsley and any optional grated parmesan cheese to enjoy!
