Not all Valentine eats have to be treats! These 3 Ingredient Beet Gnocchi are perfectly festive to serve as a Valentine’s Day lunch or dinner. I’ve made gnocchi a handful of times before. In fact, I’ve made THIS very gnocchi before.
The thing I love about this gnocchi is that it’s so easy to make, especially compared to other gnocchi recipes out there. This one takes a whopping 3 whole ingredients and just about 10 minutes of hands on rolling, cutting, preparing.
These gnocchi aren’t just for Valentine’s Day either. They would be great as party of dinner at any time of the year. I just think the pretty natural red coloring is something to especially be enjoyed this month! Being as there are only the three ingredients in these pasta pillows, they are naturally healthy.
Especially when being served over a bed of warmed/wilted greens. Good stuff!
I served mine tossed in some pesto sauce and a little sprinkle of parmesan cheese. But honestly these gnocchi could be used in just about any format that traditional gnocchi is used in. Anything from soups, to a side, or as a main part of the dish as I did here!

• 1 C. Roasted Beets
• 1 1/2 C. All-Purpose Flour
• 1 Whole Large Egg
• Salt & Pepper to Taste Directions:
Purée or beat the beats to your desired consistency. (I like to leave mine with a little chunk to them.)
Combine all ingredients together in a large bowl.
Using your hands, mix everything together to form dough. (You will want the dough to be slightly sticky.)
Divide the dough into four sections.
Roll each section on a lightly floured surface until about 1/2" thick.
Cut the long rolled out sections ito 1" 'pillows'.
Dust the pillows with just a little bit of flour to help prevent sticking.
If you want the traditional gnocchi indentation, gently press the pillows into the prongs of a fork.
Bring a large pot of water to a boil and add the gnocchi. Cook in batches if necessary.
As soon at the gnocchi begins to rise to the surface, they are cooked!
Cooking doesn't take long. Mine started to rise to the surface of the boiling water in about 5 minutes or less.
Drain and let cool slightly.
Enjoy right away however you like your gnocchi!
