Originally this toast is supposed to be made with ricotta, but I decided to swap that out for a low fat cottage cheese instead to lower the calories while not sacrificing any flavor. If you wanted to get a similar texture to ricotta, you could always blend the cottage cheese with a splash of milk. The richness of the honey roasted berries on top of that adds pairs well to give a variety of texture and taste to this toast!
Honey Roasted Cherry Cottage Cheese Toast
Ingredients
- 26 Fresh Cherries, Stems Removed
- 2 Tbsp. Honey
- 6 Slices of Sourdough Bread
- 1 1/2 C. Low Fat Cottage Cheese
- Drizzle of Balsamic Reduction
- Pinch of Flake/Course Sea Salt
Instructions
- Preheat the oven to 450 degrees F. and line a baking sheet with a silicone mat. Give it a light spritz of non-stick spray and toss the 26 Fresh Cherries and 2 Tbsp. Honey onto the baking sheet.
- Place in the oven to roast for 15 minutes or until the cherries are softened.
- Once the cherries are done, remove them from the oven and set aside to cool slightly.
- While the cherries are cooling, reduce the heat of the oven to 400 and place the slices of sourdough into the oven on the racks to let them toast for about 5 minutes per side.
- As the bread is toasting, carefully pit the cherries and set aside.
- When the bread is toasted, remove it from the oven.
- Top each toast with 1/4 C. of the Low Fat Cottage Cheese.
- Divide the cherries evenly among toast.
- Drizzle with cherry juices, Balsamic Reduction, and sprinkle on some Flake/Course Sea Salt.
- Add more honey if desired and enjoy right away!
