It’s versatile in that it can be served cold as a light lunch, used as a side at dinner, or even warmed in the skillet as a hot side! No matter which way you dish it, it’s full of healthy nutrient dense things to keep you full and satisfied.
Honey Dijon Broccoli Salad
Ingredients
- 1/2 C. Extra Virgin Olive Oil
- 2 Tbsp. Lemon Juice
- 2 Tbsp. Dijon
- 1 Tbsp. Apple Cider Vinegar
- 1 Tbsp. Honey
- 2 Garlic Cloves
- 1/2 Tsp. Salt
- Pepper
- Red Pepper Flakes
- 3/4 C. Cooked Quinoa
- 1/2 C. Slivered Almonds
- 16 Oz. Fresh Broccoli, Chopped
- 1/3 F. Fresh Basil, Chopped
Instructions
- Place the 1/2 C. Extra Virgin Olive Oil, 2 Tbsp. Lemon Juice, 2 Tbsp. Dijon, 1 Tbsp. Apple Cider Vinegar, 1 Tbsp. Honey, 2 Garlic Cloves, 1/2 Tsp. Salt, Pepper, and Red Pepper Flakes into a blender, food processor, or cup with an immersion blender. Puree until smooth and well blended.
- Toss the 3/4 C. Cooked Quinoa, 1/2 C. Slivered Almonds, 16 Oz. Fresh Broccoli, and 1/3 F. Fresh Basil together in a large container.
- When ready to enjoy, divide the salad evenly and serve with the dressing.
