The count down to the 4th of July is on and I'm always super excited for this holiday! There's just something to be said about the heat of the summer, (healthified) BBQ, and fireworks. How could you not be excited to celebrate the independence of your nation in such a way?

Well, in a month or so anyway...
Now let's honor you with cute toast for breakfast.
Now, this isn't really a recipe per say... even though I did give the nutritional breakdown below and the amounts of everything that I used. It's really just a super clever, fun, and easy way to enjoy breakfast around the 4th of July without feeling guilty about what you're putting in your mouth.
After all, usually BBQs and celebrations are full of eats and treats that aren't exactly good for you.
I used a pretty hefty slice of toast for my flag, rather than my usual go-to 50 calorie slices. I wanted something more substantial that would not only fill my tummy, but would hold up to the fruit on top.
I served my patriotic toast with a side of scrambled eggs, but some more fresh fruit and maybe a greek yogurt would pair nicely with it as well!
While this will put a smile on just about anyone's face, it's not just for adults. This is a big hit with the kiddos too!
Plus, you can feel great with knowing that they've got a healthy and perfectly playful breakfast to help start their day and get them in the spirit.

Ingredients:
1 Slice 100% Whole Wheat Bread
1/2 Wedge Laughing Cow Cream Cheese Spread
1 Tsp. Strawberry Fruit Spread (Preserves/Jam/Etc...)
1 Large Fresh Strawberry, Sliced & Halved
6 Fresh Blueberries
Directions:
Toast the slice of bread.
I like mine to be pretty toasty. Almost burned.
Allow the toast to cool slightly. You don't want to melt the cream cheese into a gooey mess!
Spread half of the wedge of Laughing Cow cream cheese over the piece of toast.
Stripe the jam over the cream cheese spread length-wise and top the preserves with sliced strawberries.
This helps the fruit stick to the toast better.
Arrange blueberries in a corner together and enjoy right away!
