I remember back when I was little, my mom would make my brother and I 'Breakfast Rice' which was full of butter, sugar, and warm milk. It. Was. Fantastic. Truly one of my fondest breakfast memories.
My little girl has been a rather picky eater for the last year or so. Thankfully, I have been able to get her to at least try new things over the most recent months. One thing that she will never turn away is rice, and yet... for whatever reason, I hadn't thought previously to give her a nice bowl of rice for breakfast.
I know that rice can be one of those things that you may not generally consider a breakfast item, but I promise you - if you haven't tried it before, you'll fall in love! I lightened this recipe up by using a fat free milk and light butter. Other than that, there really isn't much else to adjust.
This past week I was sent some UNCLE BEN'S® Whole Grain Brown Ready Rice to sample and I knew immediately what I wanted to do with it. Breakfast Rice! I was a little worried about the whole 'ready rice' thing, as my experiences in the past with similar items were less than impressive. I was even more prepared to be knocked back by a lengthy ingredient list full of words that I couldn't understand, but... nope! To my surprise and delight there was nothing but pure and simple stuff in there! Water, brown rice and oils.
Healthified Breakfast Rice Cereal

The Skinny:
Servings: 3 • Size: About 3/4 Cup Cereal • Calories: 269.3 • Fat: 5 g • Carb: 50.4 g • Fiber: 2 g • Protein: 4 g • Sugar: 20.5 g • Sodium: 66 mg
Ingredients:
2 C. (1 Pkg.) UNCLE BEN'S® Whole Grain Brown Ready Rice
1/3 C. Dried Fruit (I used cherries!)
3 Tbsp. Brown Sugar
1 1/2 Tbsp. Light Butter
1/4 Tsp. Vanilla Extract
Dash Ground Nutmeg
Dash Ground Cinnamon
3/4 C. Fat Free or Skim Milk
Directions:
Cook the UNCLE BEN'S® Whole Grain Brown Ready Rice according to package directions.
In a medium bowl, combine the remaining ingredients with the exception of the milk.
Divide evenly among bowls and top each with 1/4 c. of milk.
Serve and enjoy!
