I lightened these Hasselback Zucchinis up by using a reduced fat feta cheese and plant of herbs and spices. The red chili flakes really give this vegetable side dish a stand out kick in the pants! I served mine along side some grilled steaks for a simple and delicious dinner.
Hasselback Zucchini
Ingredients
- 2 Medium Size Zucchini Squash
- 2 Tbsp. Olive Oil
- 4 Tbsp. Reduced Fat Feta Cheese
- 2 Tbsp. Fresh Chopped Basil
- 1/8 Tsp. Garlic Powder
- 1/8 Tsp. Paprika
- 1/8 Tsp. Red Pepper Flakes
- Lemon Juiced
- Salt & Pepper to Taste
Instructions
- Preheat the oven to 400 degrees F. and line a baking sheet with non-stick foil or a silicone baking mat; set aside.
- Slice the zucchinis about 3/4 of the way through, enough so that you can stuff in between each slice, but also enough left so that they don't break.
- Drizzle each zucchini with 2 Tbsp. Olive Oil then divide the feta cheese mixture evenly between the two zucchini and stuff each in between the slices made.
- In a small bowl, mix together the 4 Tbsp. Reduced Fat Feta Cheese, 2 Tbsp. Fresh Chopped Basil, 1/8 Tsp. Garlic Powder, 1/8 Tsp. Paprika, 1/8 Tsp. Red Pepper Flakes, Lemon Juice, and Salt & Pepper to Taste; set aside.
- Place the zucchini in the oven to bake for about 45 minutes or until the zucchini are nice and tender.
- Once done, remove from the oven and serve right away.
