Start with a bed of crisp romaine, sprinkle in your favorite grinder inspired veggies, add a sprinkle of protein-packed chickpeas, and finish with a delightful pesto vinaigrette dressing to tie it all together.

This salad is great to have meal prepped and ready to go for the week. The pesto vinaigrette is a must here, but a lot of the other stuff can be easily swapped for other faves. I used a deli sliced turkey as the meat, but you could definitely go with a salami which would be more traditional to a grinder but also have more calories.
Grinder Jar Salad
Ingredients
- 1 (15 Oz.) Can Chick Peas/Garbanzo Beans, Drained & Rinsed
- 1 C. Sliced Green Olives
- 1/2 C. Sliced Pepperoncinis
- 1/2 Lb. Deli Turkey, Cubed
- 4 Oz. Fat Free Mozzarella Cheese, Cubed
- 9 C. Chopped Romaine
- 1/2 C. Pesto
- 1/4 C. Extra Virgin Olive Oil
- 1/4 C. Red Wine Vinegar
- 2 Tbsp. Grated Parmesan
- Salt & Pepper to Taste
Instructions
- Place the ingredients for the vinaigrette (1/2 C. Pesto, 1/4 C. Extra Virgin Olive Oil, 1/4 C. Red Wine Vinegar, 2 Tbsp. Grated Parmesan, and Salt & Pepper to Taste) into a blender, food processor, or the cup of an immersion blender and blend until creamy.
- Divide the dressing evenly among salad jars.
- Then divide the 1 (15 Oz.) Can Chick Peas, 1 C. Sliced Green Olives, and 1/2 C. Sliced Pepperoncinis evenly among containers.
- Follow the veggies up with dividing the 1/2 Lb. Deli Turkey, Cubed and 4 Oz. Fat Free Mozzarella Cheese among jars.
- Finally, top each with 9 C. Chopped Romaine or other greens of choice. (I used some micro greens that I needed to use up.)
