I’ve been in Egg Bite mode for a while now. Can you tell?
Breakfast is honestly my favorite meal of the day, and it probably always has been. That’s because it’s really the only meal of the day that you can experiment with eating sweet or savory. And just like with eating sweet and savory, I also like to experiment with eating less meat and more vegetarian options!
It’s not secret that we eat at least half of our meals in my house as vegetarian. YES, that includes all meals too. Breakfast, lunch, and dinner alike. I know that Vegetarian Chorizo Egg Bites might sound like an oxymoron here, but I promise you these egg bites are delicious and full of chorizo flavor.
For these egg bites, I went straight for the new MorningStar Farms® Chorizo Crumbles. Their vegan and taste amazing! Plus, the crumbles are totally versatile and can be used in a plethora of ways - just like in these egg bites.
These Vegetarian Chorizo Egg Bites are the perfect ‘make ahead’ meal prep breakfast (or brunch) item. Whip a batch up and have them ready to go for the week ahead. Their light, simple to make, and delicious too!

Servings: 9 • Serving Size: 1 Egg Bite • Calories: 227 • Fat: 19 g • Saturated Fat: 10 g • Carb: 3 g • Fiber: 0 g • Protein: 12 g • Sugar: 1 g • Sodium: 464 mg
• 4 Whole Large Eggs
• 1 C. Shredded Jack Cheese
• 1/2 C. Grated Cotija Cheese
• 1/2 C. Cottage Cheese
• 1/4 C. Heavy Whipping Cream
• 1/2 C. MorningStar Farms® Chorizo Crumbles
• 2 Tbsp. Pico De Gallo
• 1/4 C. Tortilla Strips
Directions:
Pour one cup of water into the base of the Instant Pot or electric pressure cooker and set aside.
Place the 4 Whole Large Eggs, 1 C. Shredded Jack Cheese, 1/2 C. Grated Cotija Cheese, 1/2 C. Cottage Cheese, and 1/4 C. Heavy Whipping Cream into a blender, food processor, or cup for an immersion blender and blend down until smooth.
Stir in the 1/2 C. MorningStar Farms® Chorizo Crumbles and 2 Tbsp. of fresh pico.
Sprinkle the 1/4 C. of tortilla strips into the bottom of the egg mold.
NOTE: You will have leftover to make a couple more later!
Pour the egg mixture onto each of the egg mold sections over the tortilla strips.
Place the egg mold onto the metal steamer rack and lower into the pressure cooker.
Lightly cover the egg mold with foil and secure the lid.
Turn the vent to 'sealed' and set the pressure cooker to 'Steam' for 8 minutes.
Once done, allow the natural pressure to release (this took right at 10 minutes.)
Remove the mold and set aside to cool for a few minutes before popping the egg bites out. They should be light, fluffy, and jiggle like jello almost!
Enjoy right away or store in an air-tight container in the fridge for 3-5 days.
Remove from the fridge and zap in the microwave for a few seconds to enjoy!
