I would like to say that there’s something special I did here to make these Cherry Stuffed Blended & Baked Oats lightened up, but really the only thing was using an unsweetened almond milk. Outside of that, this recipe is super simple and packed with a lot of good things and cherries!
These are a great thing to make ahead and store in the fridge to have breakfast on hand and ready to reheat and eat with just a few minutes in the microwave.
Cherry Stuffed Blended & Baked Oats
Ingredients
- 1 C. Dry Uncooked Oats
- 1 Tsp. Baking Soda
- 1 Banana
- 1/2 C. Unsweetened Almond Milk
- 2 Tbsp. Natural Sweetener
- 1 Tsp. Vanilla
- 1/8 Tsp. Salt
- 1/2 C. Cherry Pie Filling
Instructions
- Preheat the oven to 375 degrees F. and lightly coat the inside of two ramekins with non-stick baking spray; set aside.
- Add the 1 C. oats and 1 Tsp. baking soda to a blender or food processor and blend until more of a powder is created.
- Place the 1 banana, 1/2 C. milk, 2 Tbsp. natural sweetener, 1 Tsp. vanilla, and 1/8 tsp. salt in with the oat mixture and puree again.
- Divide half of the oat mixture evenly among the ramekins and top each with 1/4 C. cherry pie filling.
- Top with the remaining oat mixture and add a few additional cherries if desired.
- Place in the oven to bake for 25-30 minutes.
- Once done, remove from the oven and enjoy right away.
