Who can say no to a good breakfast wrap? Not me! This Breakfast roll Up Wrap has been my go-to breakfast for the most of the last week or so. And it’s easy to see why. Bacon, eggs, and cheese all wrapped up and ready to go! Of course, I always have to add on some pico, salsa, and jalapeños for an extra kick!
All said and done, this roll up will only cost you about 300 calories, which isn’t bad at all when you consider what all you’re getting. Plus, it’s super filling and cheesy too! Bonus, it’s simple and easy to make on top of it all. Literally one pan and you’re done.
I kept this lightened up by subbing in egg white for a whole egg and also using a reduced fat cheese. I also chose to go with a whole wheat wrap that was made with spinach, kale, and sprouted grains, the tortilla itself is just 120 calories. As for the bacon? Low sodium center cut is always the way to go!
What else is there to say? This is a great breakfast to come home to after a nice brisk Fall walk in the morning. Don’t forget your favorite salsa. Or if you do just have some on the side for dipping!
Breakfast Roll Up Wrap
Ingredients
- 1 Whole Large Egg
- 1 Large Egg White
- 3 Tbsp. Shredded Cheddar Cheese
- 2 Tbsp. Fresh Pico
- 1 Spinach & Kale Whole Grain Wrap (Mine was 120 Cal.)
- 1 Slice Cooked Low Sodium Center Cut Bacon
- Optional Extras: Salsa, Pickled Jalapeños
Instructions
- Coat a small skillet with plenty of non-stick spray and set over a medium heat.
- Whisk the 1 Whole Large Egg and the 1 Large Egg White together and once the skillet is warm, pour them into the skillet and cover with a lid. Allow to cook for a few minutes.
- Once mostly set, carefully flip the eggs over and top with the 3 Tbsp. Shredded Cheddar Cheese. Cover again and reduce heat to low until cheese has melted.
- Remove from the heat and top with the 2 Tbsp. Fresh Pico and any salsa or pickled jalapeños desired.
- Set out the 1 Spinach & Kale Whole Grain Wrap and top with the 1 Slice Cooked Low Sodium Center Cut Bacon.
- Transfer the egg to the center of the wrap and roll it all up together.
- Cut in half and enjoy right away!
