And here we have a Breakfast Crunch Wrap. It’s a crunch wrap like you know and love, but with a breakfast twist. That’s right, this crunch wrap is filled up with all the breakfast favorites like bacons eggs, and cheese - oh my! I also added in some fresh pico and of course some pickled jalapeños for an extra kick.
To keep this Breakfast Crunch Wrap nice and light, I went with a low carb tortilla and low sodium center cut bacon, because no one will ever be able to tell the difference. I also swapped in an egg white and chose a reduced fat cheddar. In the end you get this tasty Breakfast Crunch Wrap that you can share - or not.
I served mine with a side of fresh berries and of course some salsa too for a full and well rounded meal that’s perfection to wake up to. These are definitely not a make-ahead sort of meal and do need to be served pretty quickly after being put together. I mean… who would want cold eggs anyway?

Breakfast Crunch Wrap
Ingredients
- 1 Whole Large Egg
- 1 Egg White
- 1 Large Low Carb Tortilla
- 2 Tbsp. Reduced Fat Shredded Cheddar
- 2 Strips Low Sodium Center Cut Bacon, Cooked & Crumbled
- 2 Tbsp. Fresh Pico de Gallo
- Optional: Pickled Jalapeños
- 4 Tortilla Chips
- 1 Small Low Carb Tortilla
Instructions
- Lightly coat a small skillet with non-stick spray and heat over medium heat. Cook the 1 Whole Large Egg and 1 Egg White to scramble.
- Lay out the 1 Large Low Carb Tortilla and place the scrambled egg in the middle. Top with 2 Tbsp. Reduced Fat Shredded Cheddar and 2 Strips of cooked and crumbled Low Sodium Center Cut Bacon.
- Layer on the 2 Tbsp. Fresh Pico de Gallo and Pickled Jalapeños if desired.
- Set the 4 Tortilla Chips over all of that to make the shape of a circle.
- Top it all off with the 1 Small Low Carb Tortilla.
- Fold the edges of the large tortilla up around it all.
- Heat a medium skillet over a medium-high heat and place the crunch wrap seam-side down into the skillet. Cook until browned then carefully flip over and cook for another couple of minutes.
- Once done, remove from the skillet and serve right away with a side of salsa!
