• 6 Whole Large Eggs, Hard Boiled & Peeled
• 2 Tbsp. Light Mayonnaise
• 2 Tbsp. Plain Yogurt
• 1 Tsp. Yellow Mustard
• 1 Tsp. White Vinegar
• Paprika
• 1-3 Drops Pink Gel Food Coloring
• Salt & Pepper to Taste
Directions:
Half the hardboiled eggs and scoop out the yolks.
Place the yolks into a medium bowl and beat together with the 2 Tbsp. mayonnaise, 2 Tbsp. yogurt, 1 Tsp. mustard, 1 Tsp. vinegar, and a drop or two of pink food coloring. Season with salt & pepper to taste.
Transfer the mixture to a piping bag or a ziplock with the corner cut. Pipe the filling into the center of the deviled eggs and make a little ‘brain’ design.
Sprinkle a dash of paprika over the top.
Cover and place the fridge to chill for at least 30 minutes to enjoy!
