This Air Fryer Margherita Chicken is naturally gluten free, keto friendly, and low carb. I paired mine with some air friend asparagus for a perfectly rounded out meal that was tossed together in no time at all. In fact, it’s been on the menu for two weeks in a row so far!
Air Fryer Margherita Chicken
Ingredients
- 1/2 C. Halved Cherry Tomatoes
- 1/2 C. Packed Sliced Fresh Basil Leaves
- 1 Tbsp. Fresh Lemon Juice
- 2 (1/2 Lb. Total) Boneless Skinless Chicken Breasts, Pounded to 1" Thick
- 1 Tbsp. Olive Oil
- 1 Tsp. Hot Sh!t Seasoning
- 1/4 C. Pesto
- 2 Slices Mozzarella or Provolone Cheese
Instructions
- Place the 1/2 C. Halved Cherry Tomatoes, 1/2 C. Packed Sliced Fresh Basil Leaves, and 1 Tbsp. Fresh Lemon Juice into a medium bowl and toss together.
- Put the 2 Boneless Skinless Chicken Breasts, 1 Tbsp. Olive Oil, and 1 Tsp. Hot Sh!t Seasoning into a ziplock bag and toss to coat the chicken evenly in the oil and seasoning.
- Transfer the chicken to the air fryer and cook at 400 for 10 minutes, then flip the chicken over and cook for another 10 minutes or until cooked to temperature.
- When the chicken is done, remove it from the air fryer and top each with 2 Tbsp. Pesto. Followed by 1 slice Mozzarella or Provolone Cheese.
- Place back in the air fryer and cook for 3-5 minutes or until the cheese has melted.
- Once done, remove from the air fryer to plate. Top each with the tomato mixture divided evenly and enjoy right away!
