Most of the time when you come across an Asian inspired salad, it’s a lot of the same.

Today I thought I would try my hand at something a little bit different with a nod to one of my all time favorite salads; my Citrus Fennel Salad! Fennel is a very underrated vegetable that even I don’t use as much as I would like to. Summer lovin' happened so fast...

This salad was inspired by the one served at a local Mexican Restaurant that I first went to a few years back now. I was first introduced to the salad while at lunch with my Sister-in-Law and Aunt. I think it was of the best salads that I had ever eaten. And that's saying a lot since I have eaten my fair share of salads over my lifetime.

I've haven't been back to that restaurant in a good long while. Maybe that's because a couple of years back I cracked the code on their salad!

Just because it's winter, doesn't mean you can't enjoy a salad! This Winter Berry & Citrus Salad with Black Berry Vinaigrette is full of winter fruits and flavors to satisfy you on even the coldest and gloomiest of days. I mean... look at those glorious bright colors there, it's a sure-fire way to climb your way out of the winter blues with some winter greens! Hah! See what I did there?

The deep red and green here make me think that this would make for a perfectly seasonal dinner salad or festive side salad to a Holiday meal. What I love most about this salad is that the dressing is completely homemade and super simple to make too!...

Citrus Fennel Salad & White Wine Vinaigrette

What can I say? I needed something bright and sunny in my life this week. This salad is just that. Bright and sunny.

Grapefruits tend to be aplenty here in Texas during the winter time, so I always like to do something fun with them to stave off the winter blues. Not like it's been very much like winter around here lately with a high of 75 in the forecast for the upcoming week here in Austin.

Even so, my spirits needed some lifting and this bright salad was definitely a step in the right direction since it has some of my most favorite things in it. Two of which I've been absolutely obsessed with lately; grapefruit and avocado!...

Healthified Asian Salad

I love a good asian style salad and yet haven't had one in quite a long time.

Many years ago when I was younger and my mother used to by an asian style salad kit. It was very tasty and one of our favorite things to eat along side any asian dish. Most commonly we would eat it with a bowl of hot and sour soup and some spring rolls. Yummy!...
