Let me tell you guys something. I love cheese. It is my weakness. Not ice cream, or cookies, or cake - but cheese. Glorious cheese in just about any form. Sharp, sliced, shredded, fresh, soft, hard, crumbled. Any of it. All of it. I haven’t met a cheese that I don’t like, and I’ve never tried buratta before even though I’ve always wanted to.
Buratta is a pretty cool cheese. It’s basically a creamy spreadable cheese tucked away inside a skin of fresh mozzarella. So when you cut into it, the creamy cheese oozes out and it’s so so good. I didn’t want to have it just all on it’s own, so I decided to make this Baked Buratta. The name is sort of a lie since the buratta itself isn’t baked…
Skinny Stuffed Mushrooms
I for one, love appetizers. I could make a meal alone out of small appetizers, both hot and cold. One of my favorites though, has to be stuffed mushrooms. My love of stuffed mushrooms goes back several years where I think my first try was at a little Italian restaurant.
I immediately, and without being much of a cook at the time, taught myself how to make them. Skip forward to today and I like to make them with a few minor changes to the original easy recipe that included cream cheese, bacon, and just a touch of Italian cheese. I mean, who doesn’t just love the combination of cheese, mushrooms, and bacon? You’d be crazy not to!…

Potato skins are just a lot of fun to make and eat. They’re kind of the perfect vehicle to get almost anything savory into your mouth by way of finger food - which makes them absolutely perfect for game day and tailgating! I decided to take these potato skins a step further, making them into a mix of two of my favorite football food snacks; potato skins and jalapeño poppers.
That’s right, these potato skins are loaded with jalapeño, cream cheese, bacon, and cheddar too. They’re the best of both tasty treats all put into one perfectly baked bite of cheesy goodness. I don’t know about you, but I like to use the biggest potatoes that I can find…

It’s that time of year where tail gating and football food is on the mind. I don’t know about you, but I always think of buffalo chicken when I think of game day eats! I decided to take some buffalo chicken and another favorite of mine, the quesadilla, and put them together into one deeeeeelish bite! And what better way to enjoy both than in the shape of a blooming ring!
These pull apart bites of buffalo chicken and cheesy goodness are perfectly dipable, drinkable, and perfect for your game day snack line up OR as part of a dinner! I served mine for dinner with a side salad, but you better believe they’ll show up again on my next game day spread…

Sometimes you just need a spooky little side dish or appetizer to really make your day. It’s been a rather rough few weeks between pom poms and covid running rampant through my house; infecting everyone even me. Thankfully, the vaccine left me with a really mild case and just a handful of minor symptoms. Now that everyone is on the mend, we can move along with Halloween preparation!
I’m calling this tasty treat ‘Antipasto Eyeballs’ because they look exactly like that. Fresh mozzarella, olives, and some prosciutto is all you need to make this funny little appetizer. Yep, that’s right - just three ingredients and a few minutes of time…
Read MoreBBQ Chicken Dip
Like I said, I’m busting out the game day recipes as we roll into football season this year. We’ve got to make up for missing out on game day spreads for a year now! And this BBQ Chicken Dip is sure to be a real crowd pleaser. Shredded chicken, bbq sauce, and cheese make up this delicious and easy to make dip. Really, it doesn’t get more easy to make than this dip right here.
One of my favorite parts about this dip though is that it will vary and change entirely depending on what kind of BBQ sauce you use in it. Like something spicy? Use a spicy sauce? Maybe you’re a sweet heat fan? Give that one a try! The point is, you get to make it your own with your favorite…
