I’ve taken lasagna roll-ups and given them a Tex-Mex kick. I guess you could call it Tex-Italia! I loosely got the idea for this fun dish off of one that my mom makes which is called ‘Cowboy Spaghetti’. I took this dish a little more Tex-Mex though with the addition of beans and taco meat to all be rolled up in lasagna noodles. They’re basically a Tex-Mex taco in lasagna form…

As the Holidays draw ever closer, I’m always inclined to start thinking about casseroles. Especially when it comes to breakfast. I like to have something I can toss together quickly (or even the night before) so that I can serve up a group of people without breaking a sweat.

It suddenly got freaking cold here, y’all! Really, for the past few days it’s been unseasonably cold. I think I heard that Austin had the coldest Halloween that we’ve had in 30 years or something? This Skinny Baked 'Overnight' Vanilla Chai Oatmeal is based off of my Baked Amish Overnight Oatmeal, but made with plenty of added chai spice! The spice blend is homemade with spices that you likely already have on hand. It’s quick and easy to put together in the evening to have ready to go for baking up first thing in the morning.

Unlike a ‘bowl of oatmeal’ baked oatmeal is a bit more akin to cake. It’s fluffy and is generally cut or scooped to be served in a bowl where it’s topped with milk and any fresh fruits desired. Since this oatmeal likes to soak overnight, that makes this a great Sunday night breakfast to put together and have ready to go to toss in the oven on Monday for a weeks worth (plus) of breakfast!…
