This is for those of you out there that looove peanut butter and jelly! And trust me, I know there's a lot of you out there. Peanut butter and jelly has always been one of my most favorite sandwiches and flavor combinations. Over the years I've made it into cookies, candy, cupcakes and more.

Since this Skinny PB&J Parfait is about three years old now, I decided that it needed a little bit of a make over. Not only has my style of cooking and creating recipes changed, but my photography skills hopefully have too!...

Peanut butter is my jam. Pun totally intended.

I know that when I think of peanut butter, I immediately think of peanut butter and jelly. It's a timeless classic that we all know, love, and appreciate. There's just something about the sweet and the savory/salty notes coming together that instantly take you back to a simpler time. Childhood.

Another thing that comes to mind with peanut butter is that age old question, creamy or crunchy? It seems as if though such an easy question could completely divide the world. Well, what if I told you that you could have both? What if I told you that we could all live in peace and harmony, never being forced to choose sides again?...

Chicken Satay

I've been wanting to make a chicken satay for a long time now. The first time that I ever had it was at a local movie joint that's known for their gourmet food options that are available to eat while you watch your feature film. Good stuff! I mean... how can you go wrong with thai style peanut anything?

Spicy peanut sauce is one of my favorite things on the planet, I think.

Anyway, I was super stoked when OurSkinny contacted me a few weeks and asked if I'd be interested in trying out any of the fabulous recipes. The first thing that caught my eye? Chicken satay, baby! One of the most easily made decisions of my life lately. Hah!

Skinny PB&J Sandwich Cookies

Who doesn't love peanut butter and jelly? (Well, other than those unfortunate souls that have nut allergies.) It's such a classic combination... you just can't go wrong with it!

These cookies are soft, decadent, and actually very reminiscent of little peanut butter and jelly whoopie pies. When I originally began to make plans for this tasty treat, I thought I wanted more of a crunchy peanut butter cookie... but for one reason or another it didn't work out that way.

In hindsight, this was a rather happy accident. A firmer cookie wouldn't have worked out nearly as well, since taking a bite of a hard sandwich cookie would force all that lovely jelly to squish out and make for gooey fingers. This softer more cake-like cookie seems to absorb the jelly a bit so it doesn't make a giant and unwanted mess.

While my mom has been on the 'Get Forking Skinny Meal Plan', she decided that one of her favorite breakfasts/lunches ever is the Skinny PB&J Parfait. It's one of my favorites too.

So, with that in mind... I wanted to come up with another similar treat for her! Something that she wouldn't come up with on her own and that, once again, was just outside of her comfort zone.

What's better than peanut butter and chocolate?

Well, not much. If anything...
