Once again I find myself wanting something I’m not willing to turn the oven on for, so I decided to try my hand at making cookies in the air fryer. Can it be done? As it turns out - it totally can! But I decided I would make one BIG cookie instead of several little ones. Mostly for ease since I have a perfectly sized push pan that fits into the basket of my air fryer just barely.

This Air Fryer Chocolate Chip Cookie is super easy to make, and let me just say that it’s soooo good too. The air fryer gives it a unique texture that is gooey here and crisp there. Blueberry Waffles

I have pretty much been in love with my waffle maker ever since I got it, if you couldn’t tell. I’ve been making all sorts of waffles. Sweet ones, savory ones, some with mixes, others from scratch. I’ve got to say though that these Blueberry Waffles take the cake. They’re made all in one bowl with very real and very simple ingredients that you probably already have on hand.

Strawberry Crunch Monkey Bread

So you know those strawberry shortcake ice creams with the crumbly bits of strawberry crunch on the outside? So I may have come across the crumbs, and yes, you can actually buy them! Now what does one do with strawberry crunch crumbs? Well, obviously make some sort of tasty strawberry sweet! That’s when the idea for this Strawberry Crunch Monkey Bread came to be.

Take it as a breakfast, brunch, or even dessert. This nostalgic twist on monkey bread has to be one of my new favorites. It’s ridiculously easy to make too, just as most monkey breads are. Easy Key Lime Pie

Key lime pie is one of my favorites. Not that I’d turn any fruit pie away, but there’s just something about key limes! I love that it’s a creamy textured pie that is cut through with the slightly bitter and bright notes that come along with a key lime. I haven’t made a key lime pie in a good long while, so I thought I’d whip up a super easy from scratch one to be able to enjoy on this very warm Texas weekend.

This Easy Key Lime Pie is made with just a few ingredients - six to be exact! And 5 of those ingredients are pretty standard to most home pantries. The only thing slightly exotic is the key limes themselves! The first time I had a creamsicle Italian soda was waaaay back when I was just a little brat and my dad worked at the Oregon Coast Aquarium. They made creamsicles and they were always one of my absolute favorite treats when visiting.

Caprese Pasta Salad

As it’s getting hotter and hotter outside I’m craving the cold stuff. The lighter stuff. The stuff I don’t have to turn my oven on to enjoy. This Caprese Pasta Salad is just that. Get it started in the morning when it’s cool out and then finish it off in the afternoon or evening as lunch, dinner, or a side for one of the two.
