I'm tired, y'all. It's the last few weeks of school until summer break and I am dragging my booty just as much (if not more) than my sweet little girl. I'm tired and the struggle to eat real food couldn't be any greater. It's so easy to talk yourself out of eating the right things, the good things, the healthier things. I have found one way to make it easier to not fall into that trap though, and that's by following the K.I.S.S. method.

Loaded Hummus

Let's talk apps. No, not phone apps... edible apps. Appetizers! Sometimes, I have those days where I don't want to end it with a big huge meal. And today is one of those days. After spending almost all of yesterday wading around in the heat out at Pease Park here in Austin for Eeyore's Birthday, I just don't feel much like indulging in full on meals today.

Mediterranean Chickpea Salad

With the schedule around my house changing up a bit recently, I've had to make some adjustments to when and how I cook. So, I've been cooking a lot less and mostly just for myself since my little one is still a rather picky eater and lately dinner time is our mommy-daughter time.

That being said, dinner time for me has included quicker, easier dishes that are either meal prepped or a one and done toss together sort of salad. Most recently I've had a stockpile of leftover feta in my fridge that needed to be used up, which for me always means it's time for a Greek/Mediterranean style salad!...

Mediterranean Bowl

So, originally I was going to call this a 'breakfast' bowl, but then I started to realize that you could eat this for just about any meal. If you want it more 'breakfast' style you could cook the eggs scrambled or poached. For lunch? I prefer the hardboiled! Making it into dinner? Toss in some grilled chicken.

With all of that being said, I decided it was best to just call it the Mediterranean Bowl, and not label it with a specific meal type. No matter when you decided to enjoy it, it's packed with loads of nutrients and good-for-you stuff...

Turkey Greek Style Tacos

Over the lifetime of The Skinny Fork, I've been blessed to see such growth between myself and the blog. As strange as it may seem, we both seem to push the other to our limits in mostly positive and amazing ways. I'll be honest in saying that I'm a bit of an introvert. I could hold up in my house for days on end and never give it a second thought. I have a lot of social anxiety that I've been steadily working through as I become older and more confident in myself.

Mediterranean Quinoa Bowls

I've been on a mediterranean kick lately. Can you tell with my Mediterranean Toast and now this Quinoa Bowl? I have always been a fan of Mediterranean and Greek inspired dishes. I think it's the mix of savory, salty, and the bright bold flavors that go along with it. This bowl starts out with a simple cooked quinoa on the bottom and goes from there. It's light enough to enjoy as a simple dinner and yet hearty enough to have as a filling lunch.

For this bowl, I kept it traditional with fresh tomatoes, zucchini and lemon. To get some salt in there I added greek olives, feta, and of course those artichoke hearts. The avocado is there for some smooth creamy healthy fats that you can use along with the lemon juice as a dip/spread/dressing for everything else. And... who doesn't love avocado anyway?...
