I'm a little bit of an avocado fiend. Okay, so... a lot of an avocado fiend. I could easily go through a whole avocado every day and completely all on my own. So when I was trying to decide what I wanted to do with these Super Beet Chips, I figured it just had to be something with avocado and it needed to be a dip.
This White Bean Avocado Dip is super easy to make, full of flavor, and is the perfect dipper companion. It's somewhere between a guacamole (with it's Mexican inspired flavors of lime and cilantro) and a hummus (with garbanzo beans being my bean of choice.) The best of both worlds, if you ask me.

I love that these Super Beet Chips could be used in a plethora of ways such as baking, cooking, or as I did here for a snack. These crunchy beet chips are dehydrated, rather than fried, and have no added salt, sugar or oil. Plus they are high in manganese and potassium! With their delicious natural sweetness, they're the perfect light and nutritious alternative to their fried and greasy cousins!
This White Bean Dip would be great as an appetizer or snack. Quite honestly the combination of colors here between the deep red and green would make this a pretty delightful holiday bite. There's so much good stuff going on in this dip that you should trust me when I say that no one is going to realize it is actually nutritious!

Ingredients:
1 Medium Avocado
1 (14.5 Oz.) Can Reduced Sodium Garbanzo/Chickpeas, Drained & Rinsed
1 C. Baby Greens (I used baby spinach & arugula.)
2 Tbsp. Cilantro
2 Tbsp. Lime Juice
2 Garlic Cloves
1/2 Jalapeno, Chopped
Salt to Taste
Directions:
Place all of the ingredients together in a food processor, blender, or immersion blender cup.
Puree down to a creamy dip.
Enjoy right away or store in an airtight container in the fridge to chill until ready to eat!
