It's been dark and gloomy outside for two days now, and quite honestly I love it! The downpour of rain and this cooling weather to me means that fall has arrived. Fall is my most favorite season and that's probably because it includes my two favorite holidays.
With the influx of fall, comes a change to my morning routine. Things have settled down finally with my little one off at school and a much needed quite lull descending on the house during the day. It also means that I get to use my oven again. Praise be it. I've missed my oven this year during the summer.
Use of my oven means baking, and baking means I get to make homemade donuts again! These easy pumpkin donuts take no time at all to make and pair perfectly with my pumpkin spice coffee as part of a great start to any morning.
One part of my morning routine that hasn't changed at all is my daily cup of coffee. My day just can't get started if I don't get my cup of joe, and anyone that knows me well enough can vouch for that.
Of course, being a fall fanatic, you could probably guess that my favorite flavor right now is anything pumpkin oriented. There's sort of a catch to that though since it can be sort of challenging sometimes to find a specific coffee you want that also comes in the form you need for your coffee machine. That's where the EkoBrew comes in.
The EkoBrew is coming to Walmart in September and is a handy little device that allows you to choose any coffee flavor, letting you save up to 80% as compared to purchasing K-cup packs. It's compatible with Keruig (1.0 & 2.0), Mr. Coffee, Cuisinart and Greville machines. It's got some pretty great perks too, like heat resistant grips, a silicone seal, an easy open lid, and a stainless steel mesh. All with a flat bottom design to keep it from toppling over when you're filling it with your favorite ground coffee.
Yum! What goes better together than coffee and donuts? The pumpkin kick of these fluffy baked donuts was a match made in heaven with my seasonal pumpkin spice cup of coffee. These 3 Ingredient Pumpkin donuts should be a part of any morning routine, especially during the fall!
Plus, they're pretty versatile too. Add a little pumpkin pie spice to the mix if you're feeling extra spicy or give them a sprinkle of cinnamon sugar for an added bit of sweetness and crunch. Some added dark chocolate chips to the batter couldn't hurt either. Either way, you can't go wrong. I used a yellow cake mix, but a spice cake mix would also be pretty tasty.

2 Ingredient Pumpkin Donuts

The Skinny:
Servings: 18 • Size: 1 Donut • Calories: 108.5 • Fat: 1.5 g • Saturated Fat: 0.3 • Carb: 22.7 g • Fiber: 1.2 g • Protein: 1.5 g • Sugar: 0.7 g • Sodium: 153 mg
Ingredients:
1 Box Dry Cake Mix (I used an all natural yellow cake mix.)
1 (14.5 Oz.) Can Pumpkin Puree (Not pumpkin pie filling!)
Directions:
Preheat the oven to 400 degrees F and lightly coat the inside of a donut pan with non-stick baking spray; set aside.
In a large bowl, mix together the dry cake mix and pumpkin puree.
NOTE: Do NOT include the egg or oil or anything else called for on the cake box.
The batter will be pretty thick, but don't worry, it all works out in the end!
Fill the cavities of the donut pan about halfway full with the batter. (I got about 18 donuts out of my batter.)
I like to use a large ziplock bag to pipe the batter into the sections easily.
Place the pan into the oven and bake for 6-8 minutes or until the donuts are baked through and spring back to the touch.
Remove the pan from the oven and allow to cool slightly before removing the donuts.
Allow the donuts to continue to cool on a wire rack.
Enjoy right away or store in an airtight container for 3-5 days.
