It’s perfectly filling and light while also keeping you full and satisfied. Tomato Burrata Gnocchi is great as a summer dinner option that is fine all on it’s own or as part of a meal in being served with a protein or even a cool crisp salad.
Tomato Burrata Gnocchi
Ingredients
- 1 Tbsp. Olive Oil
- 10 Cloves of Garlic, Minced
- 1 Pt. Cherry/Grape Tomatoes
- 1/2 C. Reduced Sodium Broth (Vegetable or Chicken)
- 1 (16 Oz.) Pkg. Potato Gnocchi, Cooked to Package Directions
- 4 Oz. Fresh Burrata Cheese
- Fresh Basil Leaves, Sliced
Instructions
- Heat the 1 Tbsp. Olive Oil in a large skillet over medium-high heat.
- Add in the 10 Cloves of Garlic and cook just until fragrant.
- Carefully toss in the 1 Pt. Cherry/Grape Tomatoes and 1/2 C. Reduced Sodium Broth; cook until tomatoes have softened and started to burst. About 10 minutes. Use the back of a spoon to carefully smush any tomatoes that have not burst on their own.
- Add in the 1 (16 Oz.) Pkg. cooked Potato Gnocchi and cook until it's all heated through.
- Once nice and hot, remove from the heat and tear apart the 4 Oz. Fresh Burrata Cheese to scatter around the dish.
- Serve right away with Fresh Basil Leaves to enjoy!
