With Super Bowl just around the corner, it’s high time to start getting down with those gamely inspired recipes! Gameday food is some of the BEST food. But, when you’re trying to stick to your New Year’s resolutions, it can be a challenge to find a balance between the two! Being as I’m a huge fan of a decent gameday spread, I know exactly what to do.
As part of my New Year’s resolutions, I’m choosing to eat a lot more veggies. Fresh veggies. That’s why I decided to make this DELICIOUS and nutritious triple layer dip. It’s three layers of yummy stuff that you and I both can feel good about serving and enjoying!
For the first layer, we’re starting out with one of my favorites. GUACAMOLE. Avocados are life. And this homemade guacamole is my life blood. I prefer a chunky guacamole that’s simple and to the point. I want to taste those avocados, damnit!
The next layer is more decadent. Or, at least that’s how it seems. With subbing in greek yogurt in place of the sour cream, we’re adding in protein and lowering the calories. With some cheese and a few herbs and spices, this layer is a real winner.
The final top layer is as fresh as they come. Chopped tomatoes along with more herbs and spices leaves us with a pico de gallo inspired chunky ‘salsa’ that adds a final BURST of citrus and brightness.
Don’t let that ingredient list fool you. Yes. It’s lengthy. But many of the items are listed two or three times - once for each layer. Plus, this dip is SO easy to make. A couple of bowls and a few minutes and you’ve got one amazing dip that will be GOBBLED up on any gameday spread.

Guacamole:
• 2 Avocados
• 1 Tbsp. Fresh Lime Juice
• 1 Tbsp. Chopped Fresh Cilantro
• 1 Tbsp. Chopped Red Onion
• 1 Tbsp. Diced Jalapeño
• Squeeze of Lemon
• Salt & Pepper to Taste
Cream:
• 1/2 C. Plain Fat-Free Greek Yogurt
• 3 Tbsp. Cotija Cheese
• 2 Tbsp. Reduced-Fat Cream Cheese
• 1 Tbsp. Fresh Lime Juice
• 1 Tbsp. Chopped Fresh Cilantro
• Salt & Pepper to Taste
Tomato:
• 1 C. Diced Fresh Tomatoes
• 1/2 C. Diced Bell Peppers
• 3 Tbsp. Diced Red Onion
• 2 Tbsp. Chopped Fresh Cilantro
• 1 Tbsp. Fresh Lime Juice
• 1 Tsp. Diced Jalapeño
• Squeeze Fresh Lemon Juice
• Salt & Pepper to Taste
Directions:
In a medium bowl, mash together the 2 avocados, 1 Tbsp. lime juice, 1 Tbsp. cilantro, 1 Tbsp. red onion, 1 Tsp. jalapeño, a squeeze of lemon, and salt & pepper to taste.
Transfer the guacamole to the base of a serving bowl.
In another medium bowl, stir together the 1/2 C. greek yogurt, 3 Tbsp. cotija, 2 Tbsp. cream cheese, 1 Tbsp. lime juice, 1 Tbsp. cilantro, and salt & pepper to taste until smooth and creamy.
Transfer the creamy cheese mixture into the serving bowl and smooth out over the guacamole.
In yet another medium bowl, stir together the 1 C. tomatoes, 1/2 C. bell peppers, 3 Tbsp. red onion, 2 Tbsp. cilantro, 1 Tbsp. lime juice, 1 Tsp. diced jalapeño, a squeeze of lemon, and salt & pepper to taste.
Spoon the tomato mixture out over the cream layer evenly.
Cover and place in the fridge to chill for about an hour.
Once nice and cold, remove from the fridge and serve right away with baked ‘seeded’ whole grain chips or fresh veggies for dipping!
