Christmas Cake Roll

December 22, 2021 Amanda Plott

With Christmas just a few days away now, I thought I would try my hand at making a dessert to have on hand that was not only festive, but tasty too! I really enjoy roll cakes, even though they aren’t the easiest of cakes to make, they are always super impressive. Especially when you make them colorful and halfway homemade; which is exactly what this Christmas Cake Roll is!

I started off with a simple box mix that I whipped together, colored, baked, and then filled with a homemade buttercream frosting. The frosting here is always the best part, that’s because it’s homemade and not out of a can. Although, I will say that everything has its place. Even canned frosting…

Mini Shortbread Christmas Cookie Bites

December 21, 2020 Amanda Plott
christmas-cookie-bites9.jpg

These tiny Mini Shortbread Christmas Cookie Bites are really one of the best things I’ve put in my mouth this week. They’re light, crisp, buttery and full of festive holiday sprinkles. Of course, I didn’t go with traditional ‘red and green’ sprinkles. I found some awesome colorful ‘gingerbread’ holiday sprinkles that really made these tiny bites pop!

The very same ones that I used in my Healthified 'Lofthouse' Soft Sugar Cookies! The sprinkles here DO make a difference, so be sure to use your favorites. Jimmies and ‘confetti’ style sprinkles work best because they don’t bleed out color into the batter as easily as some others…

Gingerbread Cobbler

December 5, 2020 Amanda Plott
gingerbread-cobbler.jpg

Sometimes you just have to shake dessert up. This holiday season would be the great time to start a new tradition. Instead of the usual pies and cookies, why not try out this Gingerbread Cobbler! This Gingerbread Cobbler is very similar to my Whole Wheat Pumpkin Cobbler, but more in line with Christmas or New Years than Thanksgiving!

Cobbler just seems like the perfect winter dessert. It’s warm, gooey, and filling too. My mom seems to think that this cobbler is like those old fashioned pudding cakes where you layer the batter on the bottom of the pan and pour hot liquid on top to bake. While baking, the cake bubbles up to the top and the gooey pudding cobbler goodness is on the bottom…

It's day one of having my little girl home and officially off of school for the holidays and I could not be more excited! On top of all of the holiday fun and festivities, she's started getting her 6 year molars and her first 'big girl' tooth. Looks like the tooth fairy will be stopping by in the next month or so!

But, before all of that we have the Holidays right around the corner. To get us all in the holiday spirit on this joyous Monday morning, I decided to whip up a batch of these Skinny Whole Wheat Egg Nog Pancakes. Don't worry though, there's no alcohol in these, just the wonderful flavors of egg not that even the kiddos can enjoy!...

Homemade Cinnamon Whipped Cream

December 10, 2016 Amanda Plott

The holidays are on our tails and I'm busy getting ready (as I'm sure we all are) by making my usual loads of cookies, cakes, cocoa and other wonderful sweet treats. 'Tis the season, am I right? Just because it's the season of feasting and over indulging, doesn't mean that you have to go overboard though! There are so many easy ways to lighten up and indulge in your favorites without feeling guilty. It's as simple as a few swaps and some common sense.

I've heard it said before that you can eat anything you want, as long as you make it yourself. Of course, that isn't entirely the mantra that I live by, I do believe in homemaking the vast majority of the things I can. One of the most easy things to make on your own, has to be whipped cream! I've been making my own whipped cream for a few years now, and I love that I can completely control the sweetness and flavor for myself...
