If you’re the kind of person who believes dessert should be both wildly comforting and sneakily sensible, allow me to introduce your new best friend: Peanut Butter Chocolate Chunk Marshmallow Bars. These bars take everything you love about childhood campfire s’mores and elevate them with a little adult-level fun (think natural peanut butter, a modest amount of dark chocolate, and marshmallow goo). They’re gooey, chewy, slightly salty, and just sweet enough to make you close your eyes and sigh. Also: marshmallows. Need I say more?

I realized the other day that it has been a hot minute since I made any sort of bar recipe. I think the last one I made was a couple of years back and was a twist on a PB&J and was made around back-to-school time. Sooo I thought it was high time that I made some more bars. I didn’t want these to be thin little nothing bars either. I wanted them to be a meal in themselves.
The heartiness of these bars makes them great for breakfast or as an indulgent sort of dessert. They’re thick and layered and absolutely delicious. Plus, they’re egg-free, vegetarian and made with whole wheat! One of my favorite thing about these bars though? They’re crazy easy to make!…

I don’t know about you, but I grew up eating pop tarts. One of my favorite flavors has always been wild berry. So when I decided to turn them into cookie bars, I knew I was going to have to do them in a bright and colorful wild berry version. These Chocolate Chip Cookie Bars couldn’t be any more delish! They are SUPER chocolatey and have this ooey-gooey texture to them that is similar to a brownie or a blondie. It’s kind of like eating a cookie dough brownie and I am totally here for it. They are decadent and rich and mm-mm good.
They are so good in fact, that my kiddo had one for breakfast this morning and I’m not even upset about it. I might have had one for breakfast too, so it’s not like I can make any judgements. What? I’m an adult. It’s allowed for me to have a cookie for breakfast if I want to…

How many times now have I said that weekends are for baking? Many, many times! These Blackberry Oat Bars are little bites of oatmeal base with fresh blackberries peppered in for a little bit of tart among the sweetness of the bar. And I’ve got to say too, these are super easy to make.
The oatmeal base for these bars is made all in own bowl, and the blackberries are sandwiched in the middle to bake into perfect little bars that you can enjoy for breakfast, brunch, or even as a snack!…
