It's no secret that one of my favorite things about the holidays is cooking for my loved ones. As crazy and manic as it can get in my tiny little kitchen; there is nowhere else in the world that I would rather be. And that's the truth.
This Slow Cooker Breakfast Casserole is an old family favorite, and really more of a tradition now at this point. It started some years back around one of the major holidays when I had a house full of people and a bunch of hungry bellies to feed in the morning. I knew that I wasn't going to have much time in the morning, but wanted to have a hot delicious breakfast ready and waiting. That's where the slow cooker comes in!
This casserole is prepared the night before and slow cooks all night so that you wake up with a delicious breakfast that's basically hands-off, giving me plenty of time to enjoy my friends and family beyond the big traditional dinners.
I always start this Slow Cooker Breakfast Casserole off with Jimmy Dean® Sausage that I cook up to perfection. It's a unique savory blend of signature seasonings and fresh, high-quality pork sausage that goes unmatched.
The sausage is then layered along with hash browns, cheese, peppers, and onions; only to be coated in plenty of scrambled egg goodness. I lightened this dish up a bit by using egg whites and reduced fat cheeses and milk.
This is an incredibly hearty breakfast and it makes enough to feed the entire crowd. Really. It makes an entire 6 qt. crock pot or pressure cooker full of breakfast goodness to share.
I like to serve mine with a 'topping bar' so that friends and family can choose their own to suit their tastes. Some of my favorites are Sriracha, salsa, green onions, etc.

The Skinny:

Ingredients:
28 Oz. Seasoned Frozen Hash Browns
1 Lb. Jimmy Dean® Premium Pork Sausage, Cooked
2 C. Reduced Fat Shredded Cheddar Cheese
1/2 C. Reduced Fat Shredded Monterey Jack Cheese
1 Onion, Chopped
1 Green Bell Pepper, Chopped
1 Red Bell Pepper, Chopped
18 Tbsp. Egg Whites
6 Whole Large Eggs
1/2 C. Reduced Fat Milk
Salt & Pepper to Taste
Directions:
Lightly coat the inside of a 6 qt. slow cooker or instant pot with non-stick cooking spray.
Place half of the hash browns into the bottom of the pot.
Top the hash browns with half of the cooked sausage, 1 C. of the cheddar, 1/4 C. of the jack cheese, half of the onion, green bell pepper, and red bell pepper.
Repeat the layers with the remaining hash browns, 1 C. cheddar, 1/4 C. jack cheese, onion, and bell peppers.
In a medium bowl, whisk together the 18 Tbsp. Egg Whites, 6 Whole Large Eggs, 1/2 C. Reduced Fat Milk and Season with salt & Pepper.
Pour the egg mixture of the layers in the slow cooker.
Cover and cook on high for 4 hours or on low for 8 hours - or until the eggs have cooked through and set in the middle.
Once done, divide evenly among bowls and enjoy right away.
