I'm sort of in love with greek yogurt, if you hadn't noticed. I tend to find any reason and excuse to use it in almost every meal and in every way possible; not just as breakfast in the morning!
Wholesome snacking and summer fun is what it's all about for me right now. And any way that I can escape using the oven right now is key right now during these hot summer months. This no bake cheese cake is the perfect hot weather snack or dessert; cool, refreshing, and super easy to do.
Key limes are definitely one of my favorite flavors, especially in the summer, they're sweet, tangy and with just the right amount of lime flavor without giving too much of a sour punch to your taste buds. So, when I got a bagful in my local produce box this week, I knew exactly what I wanted to do; no bake key lime cheesecakes!
I was so happy with my Skinny Cherry Cheesecake Dip that I decided to do it over again in mini and key lime form!
I decided to use Yoplait® 100 Calorie Greek Yogurt in this recipe because of it's rich, thick and creamy texture. Plus, I love the fact that it's a guiltless and better for you 100 mere calories in a serving of the yogurt. You could use Vanilla or Key Lime flavor in this recipe, either one will work out just as amazingly.
There's a great variety of Yoplait® yogurts available at Walmart – Original, Light, Greek, and Gogurt®. Greek yogurt is and has always been a favorite of mine because of the added protein that comes along with any greek style of yogurt, and a 100 calorie greek yogurt? Even better!
These little cheesecakes are a great make ahead snack or dessert that is sure to keep your sweet tooth satisfied while being guilt free!
What's better is that you can even pack these cheesecakes up to go in your cooler for a family outing. Just be sure to keep them chilled and/or on ice for a better-for-you sweet treat on the go.
Skinny Mini Key Lime Cheesecakes

The Skinny:
Servings: 4 • Size: 1 Mini Cheesecake • Calories: 243.9 • Fat: 7 g • Carb: 31 g • Fiber: 0.5 g • Protein: 12.3 g • Sugar: 21.5 g • Sodium: 281.3 mg
Ingredients:
4 Reduced Fat Graham Crackers, Crumbled
8 Oz. Greek Yogurt Cream Cheese or Neufchatel
1 (5.3 Oz.) Yoplait® 100 Cal. Vanilla or Key Lime Greek Yogurt
1/3 C. Powdered Sugar
7-8 Key Limes, Zested & Juiced
Optional:
Additional Lime Wedge Garnish
Graham Cracker Crumbles
Directions:
Place the graham crackers into a bag and crumble them.
I like to use a wooden spoon or a rolling pin to do this.
Divide the crumbs evenly among four small bowls or mini mason jars.
Now it's time for the Yoplait®!
Beat together the cream cheese, yogurt, powdered sugar, lime juice and lime zest until smooth and creamy.
Divide evenly among bowls.
Top each optionally with a lime wedge or a few sprinkles more of graham cracker crumbs.
Serve right away or allow to chill covered in the refrigerator until ready to eat.
I do like to let mine chill just so that they firm back up a little bit.
Best to eat the day of, otherwise the graham crackers start to get soft!
