It’s ‘fantasy’ week here in my house as part of our themed summer weeks. And to kick thoughts off, I thought I would start us off with some Rainbow Unicorn Poptarts! These poptarts aren’t your usually run-of-the-mill poptarts. I mean, obviously… look at them!
They sort of give a new meaning to ‘eat the rainbow’, don’t they?
Even though my kid isn’t the biggest fan (at all) of poptarts, I figured with some rainbow inspiration, maybe she would give them another chance, right? Right?!
Hah! Nope. Guess I’ll have to eat these magical poptarts all myself. You don’t see me complaining about that though, do you?
Baking and especially making my own pie dough has been a fear of time off and on through the years. And even though we’re getting into summer, I’m still trying my hand at baking more and more. I’ve got to say, my initial plan was to get pre-made pie dough and just color it and move along. BUT. I really wanted to try and make some pie dough myself. So. Here we are.
I was honestly surprised and delighted with how easy it was to make the dough. A few simple ingredients and that’s about it.
I filled our magical poptarts with strawberry jam, just because that’s totally my jam. Heh. Heh. But really you can use any sort of jam or filling of your choice in these poptarts.
Now that I know the ease of making my own pie dough, watch out world! There’s going to be a lot more pie dough inspired treats now!

Poptarts:
• 1 1/2 C. All-Purpose Flour
• 1 C. White Wheat Flour
• 1 Tsp. Sea Salt
• 1 Tsp Sugar
• 1 C. (2 Sticks) Cold Light Butter
• 1/4-1/2 C. Ice Cold Water
• Food Coloring
• 4 Tsp. Jam of Choice
Icing:
• 1/4 C. Confectioners' Sugar Substitute
• 1 1/2 Tbsp. Whipping Cream
• 1/4 Tsp. Vanilla Extract
• Rainbow Sprinkles
Directions:
Place the 1 1/2 C. flour, 1 C. white wheat flour, 1 Tsp. salt, and 1 Tsp. sugar into a food processor or blender and blend together.
Add in the 1 C. COLD light butter and pulse again until a ‘grain’ like consistency forms.
Drizzle in the ICE COLD water a little bit at a time and pulse just until the dough sticks together when formed.
Divide the dough evenly among six bowls (or however many bowls as colors you intend to create.) Add the food coloring and mix with the dough to combine.
Roll the colored dough into balls and flatten them out into disks. Layer them in rainbow order and cut in half.
Twist and roll the dough together a bit to create some marbleizing among the colors.
Wrap each half of the dough in plastic and place in the fridge for at least one hour to chill.
Once the dough has chilled, preheat the oven to 400 degrees F. and line a baking sheet with a silicone baking mat; set aside.
Remove the dough from the fridge and roll one ball of dough out into an 8 1/2x11” rectangle.
Cut into 4 squares, reserving the leftover dough, and place 1 Tsp. of the jam into the center of half of the squares.
Fold the remaining squares over the ones with the jam and use a fork to pinch closed the edges to create your ‘poptart’.
Transfer to the prepared baking sheet and repeat this process with the remaining half of the dough.
Use any leftover dough to create another poptart to give you 5 in all!
Place the baking sheet in the oven and bake for about 15-20 minutes or until the poptarts are cooked through.
Once done, remove from the oven and transfer to a wire rack to cool completely.
While the poptarts are cooling, mix together the 1/4 C. confectioners sugar substitute, 1 1/2 Tsp. whipping cream, and 1/4 Tsp. vanilla to create your frosting.
When the poptarts are cooled, drizzle the icing over the top and add any sprinkles desired.
Enjoy right away or store in the fridge for 3-5 days.
